“Selling old wines in new bottles with double the kick !” Was one of the mails in my inbox. This is how a reader described my Wraps N Rolls series. “Though the contents are age old(chapatti & subji) packaging & presentation is quiet innovative” she added in her mail. Spinach & cheese is a healthy combo of vitamins & calcium for the kids lunch-box. Reduce the quantity of spinach and increase the cheese (paneer), if the child dislikes eating greens. You can gradually increase the quantity of spinach later, reinforcing the benefits of eating the greens on health to your kids. Ingredients: (For one roll)

a pinch of asafoetida(hing)

1 tsp.oil

Method: Clean and shred the spinach finely. Make cottage cheese with milk or buy ready made paneer from the grocery stores. Grate the cottage cheese. Heat oil in a kadai add mustard seeds and let it splutter. Add spinach and cook for 5 minutes till the water evaporates from it. Mix in all the other ingredients and cook or another 2 minutes. Take off the flame and cool. Use the stuffing as filling in the basic wraps as prepared in Wraps N rolls, and make the Spinach and cottage cheese rolls. Easy and quick to make with very few ingredients, Spinach and Cottage Cheese Rolls can save you on time in the mornings. Spinach will release water while cooking and make the rolls go soggy.
