Receta Spinach Balls
This is my first attempt at raw spinach balls. Pretty tasty, but I'd like to tweak them a bit more. Feel free to experiment with ingredients and let us know what you come up with. The photo looks dry on the outside, but they are really quite moist inside.
Spinach Balls
- 1/4 cup +2 Tbsp water
- 2 Tbsp ground flax seed
- 1/2 cup almonds, soaked for 6-8 hours
- 1 1/2 cups chopped spinach (fresh or frozen)
- 1/4 cup almond meal
- 1/2 red bell pepper seeded and chopped
- 1 Tbsp celery, finely diced
- 2 Tbsp carrots, finely grated
- 1/3 cup onion, chopped
- 1 Tbsp olive oil
- 1 tsp sea salt
- dash pepper
- 1/8 tsp cumin powder
- 1/8 tsp garlic powder
- 1/2 tsp onion powder
- dash cayenne pepper
- 2 Tbsp nutritional yeast (optional)
- 1/4 cup water (more as needed to mix)
- 1 tsp honey or agave (optional)
Procedure
In a small bowl, mix ground flax seed with 1/4cup + 2Tbsp water and whisk. Set aside.
In food processor, mix almonds until finely ground. Add remaining ingredients and season to taste.
Add flax mixture to food processor and mix. Roll into 1 or 2 inch balls. Place on non-stick sheet and dehydrate at 125 degrees for one hour.
Remove from non-stick sheet and transfer spinach balls onto mesh trays. Continue to dehydrate at 110 degrees for 6-8 hours.
Store in freezer and defrost as needed by warming in dehydrator for 15 minutes.
