Receta Spinach, Ham, Avocado Salad, Thousand Island Dressing; golf?!?

One of the nicest things about summer salads is they don’t have to involve cooking. Just assemble and eat.

Of course, if you’re me, first you have to pick the spinach and lettuce, then carefully wash it to make sure there is no added protein hiding in the leaves.

For all of you who shop at farmer’s markets… Remember, finding a slug or snail in your lettuce is a good sign that it’s organic.

I fried the onion and pepper….. I don’t really like raw onion, and as long as I was cooking the onion I tossed in the pepper. Leave both raw if you prefer

Spinach, Ham, Avocado Salad, Thousand Island Dressing

Total time: 15 minutes

Ingredients:

2 tbs chopped dill pickle

Instructions:

Fry onion and pepper in olive oil until tender. Remove from heat.

Prepare greens, tear and put into a large salad bowl.

Put all ingredients for dressing into a bowl and whisk well to combine.

To make Salad:

Add 3 tbs dressing to lettuce and toss well to combine.

Taste and add more dressing if needed

Add all remaining ingredients to salad and toss gently.

Serve, remaining dressing on the side.

Our dogs ‘first human’, aka: their breeder, was visiting us this week. His own dogs were home, in the mountains, so he had to make due with mine.

He wanted some photos to add to the ‘family collection’.

His camera had a dead battery so I was recruited to do the job.

I thought I would share a few.

It’s not easy to get photos of two dogs playing rather violently.

They did stop once to make certain I was doing a good job.

There is a ‘rustic’ golf course near us. We’ve driven by and it looks only slightly better than our mowed field.

And I mean mowed field, not mowed lawn….

Anyway, since the three of us were regular golfers in Andorra, mon mari thought it would be fun (amusing) to play.

He also thought it was just a little par 3 course, a ‘pitch and put’..

So we each selected 3 clubs and a putter, grabbed a few balls and off we went. Between the three of us the longest club we had was a 7 iron.

Oh yes, none of us have played in 10 years, since we left Andorra.

We got a few strange looks when we walked up to the clubhouse, wearing sandals rather than proper golf shoes, and carrying 4 clubs rather than a full set in a bag.

I had a suspicion we might have misjudged the course.

It was confirmed when we stepped up to the first tee and discovered the hole was 292 meters (over 300 yards) long.

The course was not a ‘little pitch and put’.

We should have had all of our clubs – or at least three or four more.

We laughed, decided we were equally handicapped and off we went.

As it turns out, being so poorly prepared was probably an advantage. We didn’t worry about how well we played, just laughed and had a good time. We were the only people on the course so there were no witnesses to our miserable play.

And I got the only par of the day…..
