Ingredientes

  • 1 pkt Frzn Spinach, thawed, squeezed, minced
  • 1/4 c. Parsley, minced
  • 1 Tbsp. Green Onion, minced
  • 4 x Large eggs
  • 1/4 c. Parmesan Cheese
  • 1 Tbsp. Matzoh Meal
  • 4 x Matzoh crackers
  • 2 tsp Water
  • 2 c. Cottage Cheese
  • 1 Tbsp. Fresh Dill, minced
  •     X Salt
  •     X Pepper
  • 1 Tbsp. Oil
  • 2 Tbsp. Parmesan Cheese

  3. .................................................................. This wonderful Sephardic dish, perfect for Passover, tastes like spinach lasagna. The filling can also be meat cooked with tomatoes and spices.
  4. PREHEAT oven to 350F. Oil a 8 or possibly 9 inch square pan.
  5. IN medium bowl, mix spinach, parsley, green onions, cottage cheese, dill, 2 of the Large eggs, Parmesan and matzoh meal. Season to taste with salt and pepper.
  6. FILL one bowl with warm water and a second with the remaining 2 Large eggs beaten with 2 tsp. water. Dip one matzoh at a time into water bath. Leave 2 min to soften. Blot with paper towel and dip into egg mix.
  7. LINE bottom of one pan with one matzoh. Split 2 matzohs in half and line sides of pan. Fill with spinach mix and top with remaining matzoh.
  8. BRUSH oil on top of matzoh. Bake 30 min. Sprinkle with Parmesan and bake another 15 min or possibly till filling is set and top is browned slightly. It will hard up as it cools. Serve hot.
