Receta Spinach Pesto
Pesto, a sauce native of Italy is a universal and an adaptive dish. It can be used as a sauce for pasta, mixed with rice, or used as a spread etc... Generally a pesto contains olive oil, garlic, basil, pine nuts and Parmesan. This is traditionally prepared by coarsely crushing these ingredients in a mortar and pestle until they form a creamy consistency. Pesto is a generic term for anything that is made by pounding. Nowadays there are so many variations to it and hence the traditional ones are called pesto alla genovese or pesto genovese.
Today's recipe you have a spinach and coriander pesto. I used this combination in order to prepare a variety rice with this. But as I said earlier this can be used in many ways. As it is popularly known, spinach is loaded with essential nutrients. It is considered one of the healthy vegetable and generally kids are forced to eat when they dislike it. Another spring recipe on the table. Although the spring is yet to come in our parts, we can at least enjoy the food!
SPINACH PESTO

Serves: 2
Ingredients
- 2 Cup Loosely packed Spinach
- 1/2 Cup Coriander leaves
- 2 no's Garlic pods
- 1 no Green Chilli
- 1/4 Cup Olive oil
- Salt & Pepper
- for seasoning
- 1/2 Cup Parmesan
Instructions
Add all the ingredients in a mixer and grind it to a fine paste. Check for seasoning and grate cheese on top before serving.
