Spinach Ricotta Stuffed Shells

Ingredientes

  •     vegetable cooking spray
  • 1 c. minced onion
  • 6 c. minced fresh spinach
  • 1 1/4 c. chopped cabbage
  • 2 Tbsp. chablis or possibly dry white wine
  • 2/3 c. part-skim ricotta
  • 2 Tbsp. chopped fresh parsley
  • 1/4 tsp pepper divided
  • 15 x cooked jumbo macaroni
  •     shells
  • 1 can chicken broth, (10 1/2 ounce.)
  • 1 can tomato paste, (6 ounce.)
  • 1/4 tsp salt
  • 1/4 tsp grnd nutmeg

Direcciones

  1. Coat a large skillet with spray. Place over medium heat till warm. Add in minced onion and sauteeuntil tender.
  2. Add in spinach, cabbage and wine. Sautee4 min
  3. Stir in ricotta cheese, parsley and 1/8 t., pepper.
  4. Sautee2 min
  5. Stuff each shell with 2 1/2 teaspoon Spinach mix. Arrange in shallow baking dish coated with spray. Set aside. Combine remaining 1/8 teaspoon Pepper, broth, tomato paste, salt and nutmegin a small bowl. Spoon over shells. Cover and bake at 350F for 30 min or possibly till heated thoroughly.
