Ingredientes

  •     Before proceeding read about Souffles on
  • 3 Tbsp. butter or possibly margarine, melted
  • 3 Tbsp. flour
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/8 c. onion, very finely chopped
  • 1 c. lowfat milk or possibly thin cream
  • 1 c. cooked spinach
  • 3 x Large eggs, separated
  • 1/2 c. grated Parmesan cheese

Direcciones

  1. Mix together the butter, flour, seasonings and onions, gradually add in the lowfat milk. Press spinach dry and put through a sieve, add in to the flour mix. Beat the egg yolks and add in to the flour mix. Mix in the grated cheese. Beat the egg whites till stiff and add in to mix. Pour into a buttered dish, and place dish into a larger pan containing warm water. Bake at 350 degrees F for 40 min. Serve when set.
