%20freshly%20harvested%20carrots%20are%20a%20million%20times%20better%20than%20store-bought.%20%20Crisper,%20crunchier,%20sweeter,%20dirtier.%20%20Ummm...it%20can%20be%20hard%20to%20wash%20all%20the%20garden%20soil%20away.%3C/p%3E%3Cp%3EMy%20brothers%20and%20I%20were%20like%20little%20bunnies%20nibbling%20our%20way%20through%20the%20garden.%20%20Carrots%20were%20a%20big%20grazing%20item%20for%20us.%20%20It%20was%20easy%20to%20pull%20up%20a%20carrot,%20wash%20it%20off,%20pinch%20off%20the%20thin,%20straggly%20end%20of%20the%20root%20with%20thumb%20and%20index%20finger,%20and%20have%20a%20quick%20snack%20without%20having%20to%20go%20inside.%20%20Because%20sometimes%20going%20inside%20for%20a%20snack%20ran%20the%20risk%20of%20being%20told%20%22it's%20time%20to%20come%20in%20anyway.%22%20%20Outta%20sight,%20outta%20mind%20was%20our%20motto.%3C/p%3E%3Cp%3EI've%20always%20liked%20raw%20carrots,%20but%20never%20had%20a%20taste%20for%20them%20cooked.%20%20Mom%20tried%20all%20sorts%20of%20things%20(except%20roasting%20them,%20which%20I've%20decided%20that%20I%20like)%20but%20all%20the%20various%20intrpretations%20of%20boiled%20carrots%20never%20caught%20on%20with%20me.%20%20I%20preferred%20the%20bunny%20way.%3C/p%3E%3Cp%3EBut%20the%20recipe%20below%20for%20Zippy%20Glazed%20Carrots%20is%20something%20I%20can%20get%20into.%20%20Probably%20because%20the%20sweet%20and%20tangy%20sauce%20is%20the%20dominant%20taste%20rather%20than%20the%20cooked%20carrots.%3C/p%3E%3Cp%3EThis%20is%20a%20little%20different%20than%20the%20typical%20glazed%20carrots%20because%20of%20the%20mustard.%20%20It%20adds%20a%20surprising%20little%20twist.%20%20The%20glaze%20reminds%20me%20of%20the%20glaze%20on%20baked%20ham%20(the%20only%20part%20of%20a%20ham%20I%20eat).%20%20The%20recipe%20comes%20from%20one%20of%20my%20favorite%20cookbooks:%20Talk%20About%20Good,%20published%20by%20the%20Junior%20League%20of%20Lafayette,%20LA.%3C/p%3E%3Cp%3EMise%20en%20place:%20carrots,%20butter,%20yellow%20mustard,%20brown%20sugar,%20salt,%20parsley%20(optional)%3C/p%3E%3Cp%3EFirst,%20the%20carrots%20need%20to%20be%20cooked.%20%20Boil,%20simmer,%20steam,%20whatever%20you%20like.%20%20Cook%20them%20until%20they're%20almost%20as%20tender%20as%20you'd%20like...they'll%20cook%20a%20bit%20more%20later.%3C/p%3E%3Cp%3EBe%20sure%20to%20drain%20well.%3C/p%3E%3Cp%3EMelt%20butter%20in%20a%20skillet.%20%20Stir%20in%20the%20brown%20sugar,%20mustard,%20and%20salt.%20%20If%20you%20like%20a%20sweeter%20sauce,%20decrease%20the%20mustard%20or%20increase%20the%20sugar.%20%20If%20you%20like%20a%20tangier%20sauce,%20do%20the%20opposite.%20%20See%20how%20easy%20I%20am?%3C/p%3E%3Cp%3EWhen%20the%20mixture%20bubbles,%20add%20the%20cooked,%20drained%20carrots.%3C/p%3E%3Cp%3ECook%20for%20about%208%20minutes,%20stirring%20constantly.%20%20Sprinkle%20with%20parsley%20if%20you%20want.%20%20Serve.%3C/p%3E%3Cp%3EZippy%20Glazed%20Carrots%3C/p%3E%3Cp%3Efrom%20Talk%20About%20Good%20(with%20very%20minor%20changes)%3C/p%3E%3Cp%3ECook%20carrots%20anyway%20you'd%20like,%20such%20as%20steaming%20or%20boiling/simmering.%20%20When%20the%20carrots%20are%20almost%20as%20tender%20as%20you'd%20like,%20drain%20and%20set%20aside.%20%20They%20can%20even%20be%20cooked%20ahead%20of%20time.%3C/p%3E%3Cp%3EMelt%20butter%20in%20a%20skillet.%20Stir%20in%20brown%20sugar,%20mustard,%20and%20salt.%20If%20you%20prefer%20a%20sweeter%20sauce,%20reduce%20the%20amount%20of%20mustard%20or%20increase%20the%20sugar.%20%20If%20you%20want%20a%20tangier%20sauce,%20reduce%20the%20amount%20of%20sugar%20or%20increase%20the%20mustard.%3C/p%3E%3Cp%3EWhen%20the%20mixture%20bubbles,%20add%20cooked%20carrots.%20%20Cook%20for%20about%208%20minutes,%20stirring%20constantly%20until%20heated%20through%20and%20glazed.%20Sprinkle%20with%20parsley%20before%20serving,%20if%20desired.%20Serves%204.%3C/p%3E%3Cp%3EP.S.%20%20We'll%20be%20moving%20to%20a%20new%20house%20over%20the%20next%20couple%20of%20weeks.%20%20I%20have%20some%20posts%20scheduled%20to%20go,%20but%20if%20I%20don't%20visit%20or%20comment%20on%20your%20blog%20it's%20because%20we%20don't%20have%20internet%20service%20at%20the%20new%20house%20yet.%20%20It%20isn't%20because%20I%20don't%20care!%3C/p%3E){kind=link}
