Receta Spring Onion and Pumpkin Soup
Ingredients:
- Pumpkin – 1/2 cup, chopped
- Spring Onion – 1, chopped
- Carrot – 1/2 cup, chopped + little grated for garnish
- Oats – 1 tblsp, powdered
- Milk – 2 tblsp
- Salt as per taste
- Butter as required
- Black Pepper Powder as per taste
- Water or Vegetable Stock – 2 cups
Method:
1. Heat butter in a pan over medium flame.
2. Saute the spring onions and carrots.
3. Add 2 cups of water, pumpkin pieces and salt.
4. Simmer for 20 to 30 minutes.
5. Remove the pan and cool.
6. Strain and puree the vegetables.
7. Transfer the pureed vegetables to a pan and place it over medium flame.
8. Add oats powder, milk and cook for 15 to 20 minutes.
9. Sprinkle black pepper powder and garnish with grated carrot.
10. Serve hot.
