Receta Spring Peas
I am such a fan of fresh vegetables. I can totally walk into my garden and pick green beans, peas and tomatoes and eat them fresh off the plants. There is absolutely no way you can get the same taste from your vegetables when you get them at a grocery store.
These peas were so sweet and with just the hint of bacon flavoring along with the shallots, they were actually my favorite part of dinner. I actually had 2 helpings (ok 3, but they was only a small bit left in the bowl).
If you don’t have enough room for a garden, please seek out your local farmers market and buy your vegetables fresh from the farmer. You won’t be disappointed. You’ll be amazed at what you’ve been missing.
Ingredients:
- 1 1/2 cups freshly shelled peas (frozen if you can’t find fresh, NOT canned)
- 2 tablespoons bacon fat (I keep a nice little cupful in the fridge at all times)
- water
- salt & pepper to taste
Place your freshly shelled peas in a colander and rinse well. In a small pot melt the bacon fat. You can additionally fry 2 strips of bacon to get your rendered fat, and then chop the bacon and add to the peas. Wow, why didn’t I do that? Oh well, next time. Next add the rinsed peas and just enough water to barely cover the peas.
Raise the heat to a simmer and let cook until peas are tender, about 20 minutes. Drain any remaining water, season to taste with salt & pepper.
