Squash Frittata

An Italian egg dish, made in a microwave.

Ingredientes

  • 6 eggs
  • ⅔ cup summer squash, cubed
  • ⅔ cup winter squash, cubed
  • ½ cup provolone cheese, shredded
  • ½ cup mozzarella cheese, shredded
  • ⅓ cup tomatoes, chopped
  • ⅓ cup onions, chopped
  • 3 tbs. milk
  • 1 tbs. basil, dried
  • 1 tbs. oil
  • ½ tsp. salt
  • ¼ tsp. garlic, powdered
  • ¼ tsp. black pepper, ground

Direcciones

  1. Cook the squash, tomatoes, and onions for five minutes at 950 watts, covered.
  2. Coat the bottom of a pie plate with the oil. Beat the eggs and mix with the rest of the ingredients, then pour the mixture on top of the oil. Heat, vented, for nine minutes at 650 watts.
  3. Let stand for a couple of minutes. Slice into quarters and serve.
