Welcome Back~ It's so nice to be back and in the swing of things again, after last months Holiday break. Here in Northern WI, January has been a bitter cold and snowy month. We have had a wind chill advisory in effect for most of the month of January with temperatures reaching as low as -45 degrees. With school closings and many businesses closing, I can't think of a better way to stay warm, than in my kitchen whipping up delicious things to eat!! This month I was assigned Sally's blog Bewitching Kitchen. Sally had a number of recipes I wanted to try such as; Black Olive Sourdough Bread, Saturday Morning Scones and a Cheese Souffle. I decided on
Beef and Broccoli Stir Fry. I picked this recipe because when my hubby and I order take out Chinese, I always order Cashew Chicken, General Tao's Chicken or Beef and Broccoli Stir Fry~ I followed Sally's recipe to the letter except I used a green bell pepper instead of a yellow one and I added one green onion, sliced.(I found one lonely green onion in the crisper, so I added it:) This recipe was excellent! The marinade was wonderful, the beef was tender, the sauce was delicious and the broccoli and peppers, were crisp-tender. This was a classic recipe with the classic taste I love~ Thanks for a great recipe Sally....can't wait to try your Saturday Morning Scones next:)
- Beef and Broccoli Stir Fry~
- lb. flank steak, sliced thinly across the grain
- lb. broccoli florets
- 2 T grape seed oil
- 1 yellow (green) bell pepper, seeded, cut in slices
- 1 clove garlic, very finely minced
- 1 sliced green onion, optional
- 1 t cornstarch dissolved in 1 T water
- For Beef Marinade:
- 1 t soy sauce
- 1 t Chinese rice wine
- 1/2 t cornstarch
- fresh ground black pepper
- For the Sauce:
- 2 T oyster sauce
- 1 t Chinese rice wine
- 1 T soy sauce
- 1/4 c chicken broth
1. Start by marinating the beef; mix all the ingredients in a bowl, add the sliced beef and stir to coat the slices. Let stand for 10 minutes while you prepare the sauce and blanch the broccoli.
2. Make sauce by mixing the oyster sauce, rice wine, soy sauce and chicken broth in a small bowl. Set aside.
3. Place broccoli in salted boiling water for 2 minutes. Drain well and set aside. *Note: I like to remove the broccoli from the boiling water with a large Chinese wire mesh skimmer/strainer and immediately submerge the broccoli into a large bowl filled with ice cubes and cold water. Submerge for 10 seconds. Remove the broccoli with wire mesh skimmer/strainer from the cold water, drain well and set aside.
4. Heat a large frying pan or wok over high heat until a bead of water sizzles and instantly evaporates upon contact. Add oil and swirl to coat pan or wok. Add bell pepper strips, cook for a few minutes. Remove and set aside. Heat pan again and add meat slices, let the beef fry for 1 minute. Flip the beef strips over and add the garlic, sliced green onion, if using, reserved bell pepper strips and fry for 30 seconds to 1 minute.
5. Pour in sauce, add broccoli and bring to a boil. Pour in dissolved cornstarch in water and cook stirring until sauce boils and thickens, about 30 seconds.
I served this wonderful Beef and Broccoli Stir Fry over Jasmine Rice~
Jasmine Rice (Golden Star)
In a medium saucepan, add 1-1/4 cups water. Bring to a boil, add 1 cup jasmine rice. Lower heat to simmer and simmer for 10-15 minutes, stirring once. Remove from heat and let cool in saucepan for 5 minutes, then fluff rice with a fork. Serve.
