St. Tropaz Stuffed Chicken

portabella mushrooms, a hint of citrus, seasonings, cream cheese, walnuts,red peppers, spinach all wrappd together for a burst of flavor. then drizzled honey dijon sauce to make you want another bite

Ingredientes

  • 1 Large Portabella Mushroom - medium dice
  • 1 Red Pepper - small dice
  • 1 tsp Garlic- Minced
  • 1 Large Shallot- Minced
  • 2 cups Spinach
  • 1 1/2 Cups Cream Cheese - room temp
  • 1 Lemon zested
  • Salt and Pepper to Taste
  • 1/2 cup honey dijon mustard
  • 1 cup walnuts
  • 4 8 oz chicken breasts

Direcciones

  1. Sautee portabella mushroom, garlic, shallot and the spinach til the spinach is cooked down, Set aside to let cool.
  2. Pound out your chicken til thin but not broken up. Set aside.
  3. mixed your now cool Mushroom mixture into the Cream cheese. Add the red pepper, lemon zest. Season to taste.
  4. Put a hunk of the Cream cheese mixture into the Middle of the pounded out Chicken breasts. Roll Up like you would a wrap. Fold the edges in then roll up. Place on a pan that has parchment paper, with the seam Side down.
  5. Preheat oven to 450. spread a bit of honey dijon mustard on each chicken, Sprinkle with walnuts.. add a bit of water to the pan then cover with Tin foil. Bake for 25 minutes. CHeck to make sure hte Chicken is done. if done, take off timer and put back in the oven to let the chicken brown a bit.
  6. Put on plates and drizzle with a bit of heated Honey Dijon to Look decorative
