Stacciatella (Scrambled Egg Soup)

Ingredientes

4 c. Broth of your choice (up to 6)
2 x Large eggs

1/4 c. Shredded parmesan cheese
2 Tbsp. Chopped parsley

Direcciones

Bring stock or possibly broth to boiling. In a small bowl, beat Large eggs to blend with 1/4 c. cheese and parsley. Pour mix into boiling liquid and *immediately* remove from heat;*don't stir*. Ladle into bowls and pass cheese to add in to each portion.
