%20%20I've%20searched%20for%20some%20fun%20new%20dishes%20and%20I'm%20cooking%20up%20one%20of%20my%20personal%20faves.%3C/p%3E%3Cp%3EI%20know%20that%20Italian%20food%20sometimes%20gets%20a%20bad%20rap%20because%20of%20the%20high%20carb%20content.%20%20However;%20I've%20been%20to%20Italy%20(yes,%20lucky%20me)%20and%20let%20me%20tell%20you,%20they%20aren't%20all%20obese!%20%20The%20reason?%20%20They%20don't%20eat%20a%20vat%20of%20pasta%20for%20each%20meal.%20%20A%20typical%20Italian%20dinner%20will%20include%20at%20least%20three%20courses%20eaten%20over%20the%20span%20of%20a%20couple%20of%20hours%20(or%20more).%20%20You'd%20start%20with%20an%20Antipasti%20(appetizer),%20followed%20by%20il%20primo%20(first%20dish%20that%20is%20usually%20pasta...about%20one%20cup%20worth),%20il%20secondo%20(usually%20meat%20or%20fish),%20and%20a%20contorno%20(a%20side%20dish%20of%20veggies).%20%20Also%20there%20is%20bread%20and%20wine%20of%20course.%20%20And%20usually%20espresso%20with%20dessert%20if%20ordered.%3C/p%3E%3Cp%3ENow,%20as%20much%20as%20I'd%20like%20to%20sit%20for%20two%20hours%20and%20enjoy%20my%20dinner,%20my%20kids%20aren't%20going%20to%20go%20for%20that.%20%20So,%20I'm%20forced%20to%20just%20enjoy%20the%20il%20primo%20course%20or%20il%20secondo.%20%20I%20have%20prepared%20a%20true%20Italian%20meal%20once%20for%20a%20family%20party%20at%20my%20home,%20but%20that%20was%20pre-kiddos.%3C/p%3E%3Cp%3ESo,%20keep%20in%20mind,%20when%20preparing%20Italian%20food,%20keep%20your%20portions%20smaller%20and%20you%20won't%20have%20to%20worry%20so%20much%20about%20the%20carb%20count.%20%20And%20best%20of%20all,%20just%20enjoy%20the%20deliciousness%20that%20makes%20Italian%20food%20so%20damn%20good.%3C/p%3E%3Cp%3EFor%20today,%20I'm%20making%20my%20fave%20pasta.%20%20It%20started%20as%20a%20recipe%20I%20found%20in%20a%20cookbook%20and%20then%20I've%20tweaked%20it%20from%20there.%20%20I%20love%20this%20dish.%20%20Mostly%20because%20of%20the%20gorgeous%20and%20sweet%20tasting%20cherry%20tomatoes.%20%20I%20don't%20bother%20seeding%20or%20removing%20skins...takes%20too%20much%20time%20and%20actually%20I%20like%20both.%20%20Cherry%20tomatoes%20can%20be%20pricey,%20so%20I%20don't%20make%20this%20often.%20%20Orecchiette%20is%20a%20pasta%20that%20gets%20it's%20name%20comes%20from%20its%20shape,%20which%20reminds%20one%20of%20a%20small%20ear.%20In%20Italian%20orecchio%20means%20ear,%20and%20the%20suffix%20'etto'%20means%20'small'.%20%20It's%20a%20dome%20shaped%20pasta%20that%20is%20starting%20to%20show%20up%20more%20and%20more%20in%20regular%20grocery%20stores.%20%20If%20you%20can't%20find%20any,%20use%20small%20shells%20instead.%3C/p%3E%3Cp%3EHope%20you%20enjoy%20my%20fave%20pasta%20dish!%20%20Happy%20cooking!%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EHeat%20a%20large%20skillet%20over%20medium%20heat.%20%20Add%20butter%20and%20oil.%20%20Once%20the%20butter%20is%20melted,%20add%20the%20onion%20and%20garlic.%20%20Cook%20until%20the%20onion%20is%20starting%20to%20get%20soft.%3C/p%3E%3Cp%3ETurn%20the%20temp%20up%20to%20medium%20high%20and%20add%20the%20pancetta,%20cook%20until%20crispy.%20%20Remove%20the%20casings%20from%20the%20sausage%20then%20add%20to%20skillet%20and%20brown.%20%20Pour%20in%20the%20wine%20and%20scrape%20up%20those%20delicious%20browned%20bits.%3C/p%3E%3Cp%3EToss%20in%20the%20mushrooms%20and%20stirring%20occasionally,%20cook%20till%20they%20are%20slightly%20softened.%3C/p%3E%3Cp%3EAdd%20the%20tomatoes%20(any%20extra%20juices%20too),%20basil%20and%20oregano,%20and%20salt%20to%20taste,%20and%20stir%20to%20combine.%20%20Turn%20heat%20to%20low,%20cover%20and%20simmer%20for%20one%20to%20two%20hours,%20stirring%20occasionally.%3C/p%3E%3Cp%3EWhile%20the%20sauce%20is%20simmering,%20cook%20the%20pasta%20(make%20sure%20you%20have%20good%20salty%20water)%20until%20just%20al-dente.%20%20Drain%20the%20pasta,%20reserving%201/2%20cup%20pasta%20water%20(DO%20NOT%20RINSE).%3C/p%3E%3Cp%3EBack%20to%20the%20skillet...add%20the%20spinach%20and%20cook%20till%20it%20begins%20to%20wilt.%20%20Then%20toss%20in%20the%20pasta%20and%20stir%20to%20combine%20everything...stir%20frequently%20until%20everything%20is%20heated%20through.%20%20(add%20some%20reserved%20pasta%20water%20if%20the%20sauce%20seems%20too%20thick)%3C/p%3E%3Cp%3ESpoon%20into%20bowls%20and%20top%20with%20fresh%20Parmesan%20cheese.%20%20%20Enjoy!%3C/p%3E){kind=link}
