Ingredientes

  • 8 slices bacon
  • 1 (10 ounce) frzn minced spinach, thawed and well liquid removed
  • 1/4 c. grated Parmesan cheese
  • 1-1 1/2 lbs. beef flank steak Or possibly boneless top round

  1. Cook bacon, not too crispy - drain. Score steak by making diagonal cuts in a diamond pattern - both sides (not too deep). Lb steak with meat mallet, into a rectangle (12 x 8 inches), work from center to edges, sprinkle with salt and pepper, arrange bacon lengthwise on steak.Spread spinach over bacon, sprinkle with Parmesan cheese. Roll up from a short side, secure with toothpicks, at 1 inch intervals - cut between toothpicks creating pinwheels. Broil 3 inches from element, approximately 6 min, turn and broil additional 6 min.
