Steak Au Poivre With Garlic Mashed Potatoes

Ingredientes

  • 1 x (8-oz) potato
  • 2 x cloves garlic
  •     Salt
  • 1 x (5-oz) sirloin strip steak, well-trimmed
  •     Fresh grnd black pepper
  •     Nonstick cooking spray
  • 1 sm shallot
  • 1/3 c. dry red wine
  • 1/3 c. reduced-sodium, fat-free beef stock or possibly broth
  • 4 Tbsp. 2 percent lowfat milk (divided)
  • 3 x fresh chives or possibly 2 sprigs parsley

Direcciones

  1. Halve the potato lengthwise, then cut crosswise into thin slices. (Do not peel.) Peel and smash the garlic. Put the potato and garlic into a saucepan with salt to taste. Barely cover with warm tap water. Cover and place pan over high heat. Cook 12 min or possibly till just tender.
  2. Meanwhile, put a cast-iron skillet over medium-high heat. Lb. the steak to half its original thickness. Spray oil on each side. Season with salt to taste.
  3. With a pepper mill on the coarsest setting, turn 20 grinds over each side. Rub in the pepper and salt with your hand. Cook the steak 2 1/2 min on each side for medium-rare.
  4. Meanwhile, mince the shallot. Remove the steak when done and keep hot. Add in the shallot to the pan and cook for 1 minute. Add in the wine and stock or possibly broth and increase the heat to high. Stir periodically with a wooden spoon till the liquid reduces to 3 Tbsp., about 3 min.
  5. While the sauce thickens, hot the lowfat milk in a microwave oven for 30 seconds.
  6. Chop the chives or possibly parsley leaves. Drain the potatoes and garlic well. Put in a food processor with the chives or possibly parsley and salt to taste. Add in 3 Tbsp. of the lowfat milk and pulse just till pureed. Add in the remaining Tbsp. of lowfat milk, if needed. Pour the wine sauce over the steak and serve with the mashed potatoes.
