,%20we%20caught%20Chef%20Tiffani%E2%80%99s%20Valentine%20Dinner%20segment%20and%20decided%20to%20try%20it%20for%20ourselves,%20albeit%20putting%20our%20celebratory%20meal%20off%20to%20Friday%20night.%20You%20can%20see%20the%20video,%20recipe,%20and%20the%20chef%E2%80%99s%20extra%20tips%20by%20clicking%20HERE.%3C/p%3E%3Cp%3EI%20had%20hoped%20to%20get%20some%20locally%20raised%20beef%20for%20this%20meal,%20but%20was%20not%20able%20to%20get%20to%20the%20Medford%20Winter%20Farmers%20Market%20on%20Thursday,%20so%20I%20opted%20for%20two%20strip%20steaks%20from%20Farmland,%20our%20local%20grocery%20store.%20[Note%20to%20self:%20talk%20to%20Frank%20about%20offering%20locally%20raised%20meats%20at%20Farmland!]%3C/p%3E%3Cp%3EThis%20photo%20is%20deceptive%20%E2%80%93%20these%20are%202%E2%80%B3%20thick%20%E2%80%93%20although%20the%20one%20on%20the%20right%20was%20a%20bit%20thinner%20(1%201/2%E2%80%B3)%20on%20one%20end.%3C/p%3E%3Cp%3EFor%20this%20recipe,%20all%20you%20need%20is:%3C/p%3E%3Cp%3Ebutter%20%E2%80%93%20REAL%20butter!%3C/p%3E%3Cp%3EOther%20than%20that%20%E2%80%93%20you%20need%20to%20have%20a%20really%20good%20pan.%20%20Chef%20Tiffani%20recommends%20cast%20iron,%20but%20any%20pan%20with%20a%20thick%20bottom%20that%20spreads%20and%20hold%20heat%20evenly%20will%20work%20just%20as%20well.%20%20How%20do%20I%20know?%20I%E2%80%99ll%20tell%20you.%20%20:)%3C/p%3E%3Cp%3EI%20had%20two%20steaks,%20but%20only%20one%20of%20my%20well-seasoned%20cast%20iron%20pans%20is%20big%20enough%20%20for%20one%20steak,%20never%20mind%20two.%20%20But,%20I%20also%20have%20an%20All-Clad%20saute%20pan%E2%80%A6%20Time%20to%20experiment!%20Good%20thing%20Steve%20knows%20his%20way%20around%20the%20kitchen.%3C/p%3E%3Cp%3EDueling%20pans%20set%20and%20ready%20to%20go.%20:)%3C/p%3E%3Cp%3EThe%20first%20step%20was%20to%20bring%20the%20meat%20to%20room%20temperature%20by%20removing%20it%20from%20the%20fridge%20an%20hour%20or%20so%20before%20cooking.%20Then%20we%20prepped%20each%20station%20with%20a%20few%20crushed%20garlic%20cloves,%20a%20small%20bunch%20of%20thyme,%20and%20partially%20melted%20butter,%20as%20well%20as%20a%20basting%20spoon%20and%20tongs%20at%20each%20site.%20We%20put%20about%202%20tablespoons%20of%20olive%20oil%20in%20each%20pan%20and%20were%20ready%20to%20go.%3C/p%3E%3Cp%3ESteve%20took%20his%20place%20at%20the%20cast%20iron%20and%20and%20I%20stepped%20up%20to%20the%20All-Clad%20saute%20pan,%20and%20we%20were%20off!%3C/p%3E%3Cp%3EHere%20is%20the%20technique,%20edited%20down%20to%20a%20few%20simple%20bullet%20points:%3C/p%3E%3Cp%3ESeason%20steak%20with%20pepper%20and%20LOTS%20of%20salt%3C/p%3E%3Cp%3EAdd%202%20T%20oil%20to%20pan%3C/p%3E%3Cp%3ETurn%20heat%20under%20pan%20to%20HIGH%3C/p%3E%3Cp%3EWhen%20oil%20is%20HOT,%20(smoking%20is%20good!)%20put%20steak%20in%20the%20pan%3C/p%3E%3Cp%3EBaste%20steak%20with%20the%20olive%20oil%20and%20juices%20for%203.5%20%E2%80%93%204%20minutes%3C/p%3E%3Cp%3EFlip%20steak%20and%20baste%20for%20another%202%20minutes%3C/p%3E%3Cp%3ETurn%20off%20heat%20and%20add%20crushed%20garlic%20and%20thyme%20to%20pan%3C/p%3E%3Cp%3EAdd%20butter,%20put%20garlic%20and%20thyme%20on%20steak,%20and%20baste%20all%20with%20butter%3C/p%3E%3Cp%3ERemove%20steak%20from%20pan%20and%20let%20rest%20for%20at%20least%2010%20minutes.%3C/p%3E%3Cp%3EFirst%20one%20out!%3C/p%3E%3Cp%3ENote%20the%20lovely%20crust!%20%20We%20also%20did%20as%20the%20chef%20suggested%20and%20used%20the%20tongs%20to%20hold%20the%20steak%20fat%20band%20in%20the%20oil%20to%20crisp%20that%20up,%20also.%20Holding%20the%20steak%20so%20that%20just%20the%20fat%20is%20in%20the%20oil%20is%20also%20a%20great%20way%20to%20test%20whether%20the%20pan%20is%20hot%20enough%20%E2%80%93%20if%20it%20gives%20a%20good%20strong%20sizzle,%20it%20is%20ready%20for%20the%20steak.%3C/p%3E%3Cp%3EResting%20for%20just%20a%20bit.%3C/p%3E%3Cp%3EWhile%20the%20steak%20rested,%20I%20steamed%20some%20asparagus%20and%20finished%20up%20the%20potatoes%E2%80%A6Oh,%20I%20forgot%20to%20mention%20the%20potatoes!%20%20To%20accompany,%20I%20cut%20up%20five%20or%20so%20small%20red%20potatoes%20and%20half%20a%20big%20Vidalia%20onion,%20added%20around%2010%20little%20cremini%20mushrooms,%20and%20tossed%20them%20with%20freshly%20ground%20black%20pepper,%20kosher%20salt,%20and%20a%20tablespoon%20or%20two%20olive%20oil%20in%20a%20corning%20ware%20casserole.%20I%20%20also%20had%20some%20thyme%20to%20spare%E2%80%A6%3C/p%3E%3Cp%3ERoasted%20potato,%20cremini%20mushrooms,%20and%20Vidalia%20onion.%3C/p%3E%3Cp%3EI%20then%20covered%20with%20foil%20and%20cooked%20for%20about%20an%20hour%20at%20400%20degrees,%20obviously%20starting%20them%20well%20before%20the%20steak.%20Once%20the%20steak%20was%20done%20and%20resting,%20I%20removed%20the%20foil%20and%20kept%20cooking%20to%20crisp%20up%20just%20a%20bit.%3C/p%3E%3Cp%3EAnd%20then,%20a%20lovely%20dinner.%20%20This%20picture%20does%20not%20do%20it%20credit.%20At%20all.%3C/p%3E%3Cp%3EPlated%20%E2%80%93%20with%20photo%20taken%20after%20the%20start%20of%20the%20meal!%3C/p%3E%3Cp%3EWe%20could%20have%20done%20fine%20with%20just%20one%20steak%20rather%20than%20two,%20but%20we%20did%20have%20plenty%20leftover!%20%20But,%20in%20general,%20one%20steak%20weighing%20a%20pound%20or%20a%20bit%20under%20is%20more%20than%20enough%20for%20two.%3C/p%3E%3Cp%3ELots%20of%20leftovers!%3C/p%3E%3Cp%3EBottom%20line,%20this%20is%20a%20really%20tasty%20way%20to%20prepare%20steak,%20as%20well%20as%20quick%20and%20easy.%20%20And,%20here%20is%20a%20cleanup%20tip:%20Let%20the%20pan%20sit%20overnight%20and%20use%20some%20paper%20towels%20to%20wipe%20out%20the%20congealed%20fat.%20Then,%20simply%20wash%20as%20usual%20if%20using%20a%20stainless%20steel%20pan,%20or,%20if%20using%20cast%20iron,%20just%20soak%20for%20a%20bit%20in%20very%20hot%20water%20and%20then%20wipe%20clean.%3C/p%3E%3Cp%3EAnd,%20which%20pan%20did%20the%20best%20job?%20%20After%20trying%20some%20of%20the%20second%20steak%20the%20next%20day,%20I%20can%20say%20that%20they%20both%20produced%20an%20equally%20crusty%20and%20delicious%20steak.%20%20So,%20while%20cast%20iron%20is%20the%20classic%20choice,%20feel%20free%20to%20use%20a%20stainless%20steel%20pan%20providing%20it%20has%20a%20heavy%20bottom%20and%20can%20handle%20high%20heat.%3C/p%3E%3Cp%3EBut,%20especially%20if%20preparing%20a%20special%20meal%20to%20share%20with%20your%20honey,%20I%20recommend%20the%20pan%20contest,%20or%20a%20least%20work%20together%20to%20create%20the%20entire%20meal.%20That%20will%20add%20the%20best%20seasoning%20of%20all.%20%20%3C3%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
