Steamed Apricot Self Saucing Pudding

Ingredientes

  • 1 c. minced dry apricots
  • 1/2 c. orange juice
  • 100 gm butter
  • 3/4 c. sugar
  • 1 x egg
  • 1 1/4 c. flour
  • 2 tsp baking pwdr
  • 1/2 c. brown sugar
  • 1 Tbsp. cornflour
  • 1 c. apricot and apple juice

Direcciones

  1. Bring apricots and juice to the boil. Set aside while preparing rest of ingredients. Heat butter in a saucepan large sufficient to mix all ingredients.
  2. Add in sugar and egg and mix well.
  3. Fold in sifted flour with baking pwdr and apricot mix.
  4. Pour into a greased 6 c. capacity pudding basin.
  5. Sprinkle over brown sugar and cornflour and pour warm juice over pudding over the back of a spoon.
  6. Cover with a layer of baking paper and foil and secure tightly, tying with string. Place bowl in a saucepan of boiling water. Cover saucepan with a lid and simmer for 2 hrs.
  7. Turn pudding on to a plate to serve. Serve warm.
