Ingredientes

  •     DOUGH
  • 2 2/3 c. all-purpose flour
  • 1/2 tsp dry yeast
  • 1 tsp sugar
  • 2 Tbsp. hot water
  • 3/4 c. hot lowfat milk FILLING
  • 1/2 ounce duck breasts
  • 1 Tbsp. light brown sugar
  • 1 Tbsp. light soy sauce
  • 2 Tbsp. clear honey
  • 1 Tbsp. hoi-sin sauce
  • 1 Tbsp. vegetable oil
  • 1 x leek, finely minced
  • 1 x garlic clove, crushed
  • 1 Tbsp. grated fresh ginger root

Direcciones

  1. Place the duck breast in a glass bowl. Mix together the sugar, soy sauce, honey and hoi-sin sauce. Pour the mix over the duck and marinate for 20 min.
  2. Remove the duck from the marinade and roast on a rack over a roasting pan in a preheated oven at 400iF for 35 - 40 min. Cook, remove the meat from the bones and dice.
  3. E Heat the oil and stir-fry the leek, garlic, and ginger for 2 - 3 min till tender. Mix with the duck meat.
  4. To make the dough, sift the flour into a mixing bowl. Mix together the yeast, sugar and water and leave in a hot place for about 15 min. Pour the yeast mix into the flour with the lowfat milk, mixing to create a hard dough. Knead the dough for 5 min and roll into a sausage shape 1-inch in diameter. Cut into 16 equal pcs cover and let stand for 20 - 25 min.
  5. Flatten each dough piece into a 4-inch round. Place 1 Tbsp. of filling in the center of each round and draw up the sides, twisting at the top.
  6. Place the dumplings on a damp tea towel in a steamer, cover and steam for 20 min. Serve warm.
