Direcciones
- Trim about 1/2 inch from each end of the eggplant. Then place it in a Chinese-style steamer and steam over warm water till tender, for 10 to 12 min. Cold the eggplant and tear into 3-inch long strips.
- Toss the eggplant together with all the other ingredients. Chill till ready to serve but serve at room temperature.
- This recipe yields 2 servings.
