Ingredientes

  • 1/2 c. flour (125 mL)
  • 1 1/2 c. roasted urad dal flour, see Cook's Note* (375 mL)
  • 1/2 tsp kosher salt (2 mL)
  • 1 c. warm water (250 mL)
  • 3/4 c. tinned crab meat, well liquid removed (60 mL)
  • 1/2 c. grated fresh coconut, plus 1/2 c. (125 mL plus 125 mL)
  • 1/4 c. finely minced shallots (60 mL)
  • 2 Tbsp. minced fresh basil (30 mL)

Direcciones

  1. Line a steamer with several layers of cheesecloth and fill with the flour.
  2. Steam for 45 min.
  3. Spread the steamed flour on a baking sheet to cold.
  4. Combine the steamed flour, roasted urad dal flour and salt in a large bowl.
  5. Add in the warm water, a little at a time, stirring with a wooden spoon, till the dough resembles cornmeal (may not need all the water).
  6. Place the mix in a food processor and pulse till it resembles couscous.
  7. Pour into a large bowl and fold in the crab meat, 1/2 c. (125 mL) fresh grated coconut, shallots and basil.
  8. Pack the Pittu steamer with 1 Tbsp. (15 mL) of coconut then 1/2 c. (125 mL) Pittu mix, repeat till the steamer is full.
  9. Steam for 5 to 7 min, till the steam comes out the top of the steamer.
  10. Push the Pittu out of the steamer onto a platter.
