Stewed Codfish (Guisado De Bacalhau )

Ingredientes

  • 2 lb Salt cod soaked overnight
  • 4 x Potatoes diced
  • 4 med Onions minced
  • 2 x Cloves garlic minced fine
  • 1 lrg Pimento minced
  • 4 Tbsp. Extra virgin olive oil

Direcciones

  1. Drain cod and rinse several times to remove salt. Heat oil and saute/fry' onions,garlic,and pepper till vegetables are soft. Add in cod and potatoes.
  2. Simmer covered for about 30 min or possibly till fish is cooked. Season with salt and pepper to taste.Garnish with sprigs of parsley. Serve with Portuguese or possibly Italian bread
