Receta Sticky chocolate and date pudding
Puddings are that class of desserts without which no celebration is complete, if a simple steamed pudding has that rustic flavour, then baked puddings has its own class, simple to make and great to taste and we believe that’s why they are so popular.
On a cold wintry morning nothing brings more comfort than a bowl of plain vanilla pudding with a crusty caramel top, the day seems to smile over us and brings that feel goody effect.
My romance with chocolate puddings starts few months back when I baked these delicious Chocolate pudding or pots de creme, never thought that it has that charm to hypnotize you, life seems to be on an endless path of romanticism. Since then I havent looked back, I know chocolate in puddings are just made for each other, they are simply inseparable.
But it was not so simple with sticky chocolate puddings, I first made these during Christmas, but it lacks something, may be the texture perhaps or flavour was too strong. So, this time I have improved it, though I followed the recipe in my cookbook – Chocolate and Baking Supercookery series, but I have reduced the time of baking and have added dates too.
I am not sure whether dates and chocolates are old classic pair or not, but I have recently discovered them , and I know they just completes each other. I was dying to make this for Valentine’s Special series here, but could not lay my hand on white chocolate chips, but if you could find them do add them in the recipe, the white specks in the pudding are very visually enticing.

- Ingredients
- Butter (softened) : 1/2 cup
- Light brown sugar : 3/4 cup
- Eggs (large): 3 (beaten)
- Pinch of salt
- unsweetened cocoa : 1/4 cup
- All purpose flour : 1 cup
- Dark chocolate (chopped) : 1 ounce
- White chocolate (chopped) : 2 3/4 ounce
- Dates (stoned and pitted) : 1/2 cup chopped
- Sauce:
- Heavy cream : 2/3 cup
- Light brown sugar: 1/3 cup
- Dark chocolate (optional): 1/2 ounce
- Butter: 2 tbsp
Instructions
Lightly grease 6 individual pudding moulds or ramekins.
Cream together the butter and sugar until pale and fluffy.
Beat in the eggs, a little at a time.
Sift the salt, unsweetened cocoa and flour into the creamed mixture and fold through the mixture.
Stir the chopped chocolate and dates into the mixture until evenly combined.
Divide the mixture between the prepared pudding moulds.
Lightly grease 6 squares of foil and use them to cover the tops of the moulds.
Press around the edges to seal.
Place the molds in a roasting pan and pour in boiling water to come halfway up the sides of the molds.
Bake in a preheated oven at 350 F for 45 minutes or until a toothpick inserted into the centre comes out clean.
Remove the molds from the roasting pan and set aside.
To make the sauce:
Put the cream, sugar and butter in a pan. If you are using chocolate, then melt it in microwave or in double boiler before adding it to the cream mixture.
Simmer them gently over slow heat until sugar dissolves completely.
Turn the puddings out into the individual serving plates.
Pour the sauce over the top of the pudding and serve with dollop of cream, if you wish.
Quick notes
1) Instead of chocolate pieces, feel free to use chocolate chips both dark and white.
2) Before adding the sauce over the pudding, make sure to poke some holes in it, it will keep the pudding moisten.
3) You can reduce the baking time, if you wish to, just bake until it is firm to touch.
4) If some dry crumbs still clings to the tester, it is okay to switch off the oven and let it sit there for another 10 minutes.
