%20Red%20Leicester,%20which%20is%20a%20beautiful%20orange%20colour%20and%20wonderfully%20rich%20and%20creamy.%20Cornish%20Yarg,%20Double%20Gloucester,%20Sage%20Derby,%20Shropshire%20Blue,%20Lancashire%20.%20.%20.%20to%20name%20but%20a%20very%20few.%3C/p%3E%3Cp%3EIn%20truth,%20my%20absolute%20favourite%20has%20to%20be%20Stilton%20.%20.%20.%3C/p%3E%3Cp%3EQuite%20rightfully%20known%20as%20the%20%22King%22%20of%20British%20Cheeses,%20Stilton%20claims%20it's%20name%20from%20a%20village%20just%20South%20of%20Peterborough%20.%20.%20.%20Smooth%20and%20creamy,%20with%20a%20beautifully%20complex%20flavour,%20this%20is%20one%20of%20our%20favourite%20cheeses%20to%20serve%20here%20at%20Oak%20Cottage%20during%20the%20Christmas%20season,%20indeed%20during%20any%20season.%3C/p%3E%3Cp%3EIt%20turns%20up%20in%20all%20kinds%20of%20shapes%20and%20forms%20.%20.%20.%20tis%20absolutely%20lovely%20nibbled%20with%20some%20crispy%20crackers,%20or%20on%20a%20cheese%20tray%20along%20with%20some%20sliced%20apples%20and%20golden%20pears.%20Crumbled%20into%20a%20tasty%20cauliflower%20soup,%20or%20on%20top%20of%20a%20cauliflower%20cheese%20.%20.%20.%20folded%20into%20a%20golden%20Potato%20Gratin%20.%20.%20.%3C/p%3E%3Cp%3EOh%20.%20.%20.%20it%20is%20so%20very%20lovely%20in%20all%20sorts%20of%20ways,%20hot%20or%20cold%20.%20.%20.%3C/p%3E%3Cp%3Ebut%20.%20.%20.%20none%20lovelier%20than%20this%20wonderfully%20unique%20nibble,%20which%20combines%20some%20purely%20British%20tastes%20and%20textures%20.%20.%20.%3C/p%3E%3Cp%3EA%20crispy,%20buttery%20and%20tangy%20stilton%20flavoured%20shortbread%20base,%20filled%20with%20the%20toasted%20crunch%20of%20rich%20walnuts%20.%20.%20.%20then,%20topped%20with%20creamy%20philadelphia%20cheese%20and%20a%20tasty%20dollop%20of%20sweet%20and%20spicy%20mango%20chutney%20.%20.%20.%20a%20leftover%20taste%20from%20our%20Colonial%20days%20in%20India.%20The%20toasted%20walnut%20garnishing%20the%20top%20is%20the%20perfect%20capper.%3C/p%3E%3Cp%3EYou%20will%20really%20enjoy%20these.%20You%20can%20bake%20the%20little%20shortbreads%20well%20ahead%20of%20time%20and%20keep%20them%20in%20the%20freezer,%20warming%20them%20up%20and%20topping%20them%20with%20the%20cream%20cheese%20and%20chutney%20just%20prior%20to%20serving.%3C/p%3E%3Cp%3EThese%20are%20fabulous,%20simply%20fabulous.%20These%20will%20truly%20be%20the%20jewels%20of%20your%20Holiday%20Nibble%20Trays.%3C/p%3E%3Cp%3E*Stilton%20and%20Walnut%20Shortbreads%20with%20an%20Indian%20Twist*%3C/p%3E%3Cp%3EMakes%2036%3C/p%3E%3Cp%3EThese%20tasty%20and%20savoury%20shortbreads%20are%20truly%20delicious%20even%20on%20their%20own,%20but%20when%20you%20marry%20them%20with%20the%20soothing%20creaminess%20of%20soft%20cheese%20and%20the%20tangy%20spicness%20of%20a%20good%20mango%20chutney,%20well,%20it%20truly%20is%20a%20marriage%20made%20in%20heaven!%20These%20are%20always%20the%20first%20to%20dissappear%20off%20the%20Hors%20D'oeuvres%20trays.%3C/p%3E%3Cp%3EPut%20the%20blue%20cheese%20and%20butter%20into%20the%20bowl%20of%20a%20food%20processor.%20Process%20together%20until%20creamy.%20Whisk%20the%20flour,%20corn%20flour,%20pepper%20and%20salt%20together%20in%20a%20small%20bowl.%20Add%20to%20the%20creamed%20mixture%20in%20the%20food%20processor%20and%20pulse%20to%20combine.%20Add%20the%20chopped%20walnuts%20and%20pulse%20just%20until%20incorporated.%20You%20still%20want%20there%20to%20be%20little%20discernable%20chunks%20of%20walnuts.%20Do%20NOT%20overprocess.%3C/p%3E%3Cp%3ERemove%20the%20mixture%20from%20the%20food%20processor%20and%20shape%20into%20a%20flattened%20disc.%20Wrap%20well%20in%20cling%20film%20and%20chill%20in%20the%20refrigerator%20for%20at%20least%20one%20hour,%20or%20until%20firm.%3C/p%3E%3Cp%3EPre-heat%20the%20oven%20to%20160*C/325*F.%20Line%20a%20baking%20sheet%20with%20parchment%20paper%20and%20set%20aside.%3C/p%3E%3Cp%3EPlace%20the%20chilled%20dough%20on%20a%20piece%20of%20cling%20film.%20Cover%20with%20another%20piece%20of%20cling%20film.%20Roll%20the%20dough%20out%20to%20about%201/4%20of%20an%20inch%20thick.%20Remove%20the%20top%20piece%20of%20cling%20film%20and%20cut%20into%201%20inch%20fluted%20circles%20with%20a%20sharp%20cutter.%20Place%20on%20the%20prepared%20baking%20sheet.%20Gather%20the%20dough%20scraps%20together%20and%20press%20back%20into%20a%20disk,%20roll%20out%20and%20repeat%20until%20all%20the%20dough%20is%20used%20up%20,%20placing%20each%20on%20the%20baking%20sheet,%20leaving%20about%201/2%20inch%20of%20space%20between%20each%20one.%3C/p%3E%3Cp%3EBake%20until%20lighty%20brown,%20about%2025%20minutes.%20Remove%20from%20the%20oven%20and%20place%20on%20wire%20racks%20to%20cool.%20You%20can%20do%20this%20much%20several%20days%20ahead%20if%20you%20wish.%3C/p%3E%3Cp%3EWhen%20you%20are%20ready%20to%20serve%20them.%20Top%20each%20biscuit%20with%20a%20tsp%20of%20the%20creamed%20cheese%20and%20then%20an%20equal%20amount%20of%20the%20chutney.%20Finally%20place%20a%20toasted%20walnut%20on%20top%20of%20each.%20Serve.%20(Don't%20top%20with%20the%20toppings%20un
