Ingredientes

  • 1/4 lb Stilton cheese room temperature
  • 3 Tbsp. whipping cream or possibly lowfat milk
  • 2 x baguettes - (6" to 8" long) split lengthwise
  • 2 Tbsp. currants
  • 6 Tbsp. toasted walnuts coarsely minced
  • 16 sm arugula leaves stems trimmed
  • 14 slc peeled English cucumber thin slices

Direcciones

  1. To toast nuts, spread single layer on baking sheet. Bake at 350 degrees till lightly browned and fragrant, about 8 min, watching carefully so they don't burn.
  2. Beat cheese and cream in small dish to make paste. Spread on cut sides of baguettes, dividing proportionately. Sprinkle currants and walnuts over cheese. Use back of spoon to lightly press in place. Arrange arugula leaves and cucumbers over 1 side of each semi-baguette.
  3. Close sandwiches; lightly press together. Cut in half (secure with toothpicks, if needed). Serve within 1/2 hour.
  4. This recipe yields 2 servings.
