Ingredientes

  • 3 x Or possibly
  • 4 x Dry black mushrooms
  • 1 can (15-ounce) abalone
  • 1 c. Chinese cabbage stems
  • 1/2 c. Bamboo shoots
  • 2 stalk celery
  • 1 x Onion
  • 2 slc Smoked ham
  • 1/2 c. Snow peas
  • 2 Tbsp. Oil
  • 1/2 tsp Salt
  • 1 Tbsp. Soy sauce
  • 2 Tbsp. Sherry
  • 1/2 tsp Sugar
  • 1/2 tsp Pepper
  • 1 x Clove garlic
  • 2 slc Fresh ginger root
  • 2 Tbsp. Oil

Direcciones

  1. Soak dry mushrooms.
  2. Drain canned abalone; cut in thin strips. (Reserve liquid for soup.)
  3. Also cut in strips Chinese cabbage stems, bamboo shoots, celery, onion, soaked mushrooms, smoked ham and snow peas.
  4. Heat oil. Stir in salt, then Chinese cabbage, bamboo shoots, celery, onion and mushrooms. Stir-fry to heat through (about 1 minute).
  5. Cover pan and let vegetables steam in their own liquids, over low heat, till cooked through (about 3 min). Then remove from pan.
  6. Meanwhile combine soy sauce, sherry, sugar and pepper. Mince garlic and ginger root.
  7. Heat remaining oil. Add in chopped garlic and ginger root; stir-fry a few times. Add in abalone and stir-fry 1/2 minute.
  8. Stir in soy-sherry mix and heat. Then add in snow peas. Return vegetables and gently stir-fry to reheat (about 1-1/2 min more).
  9. Garnish with ham strips and serve. VARIATIONS:
  10. In step 5, add in to the soy-sherry mix 1 Tbsp. oyster sauce.
  11. Shred the abalone; sliver the vegetables. In step 6, add in with abalone 1/2 c. roast pork, 1/2 c. cooked chicken and 1/4 c. ham, all shredded.
  12. In step 7, add in 1/2 c. abalone liquid after the soy-sherry mix and cook, covered, 1-1/2 min over low heat. Omit the snow peas and the ham garnish.
