Chinese cooking is like Chemistry, it looks complicated but in reality if you stick with two elements and finding the right combination then you’re all sorted. A lot of simple Chinese stir fry dishes consists only of a vegetable and a meat the seasonings, herbs and spices are usually generic and there are usual bases to choose from, this means is you know the basics then you just find the best combination based on your personal preference. The most popular two combo dishes in the Chinese cuisine are the string beans and minced pork, eggplant and salted fish, beef and broccoli, chicken and celery as well as tofu and mushroom to name some. Today we will be introducing another one of those powerful two main ingredient combo in the form of pork and courgettes.Stir Fried Pork and Courgettes  Save PrintPrep time Cook time Total time  Serves: 4-5Ingredients250 g pork tenderloin, sliced3 pcs medium sized zucchini, seeds removed and sliced2 tbsp cornstarch2 tbsp Chinese cooking wine1 tbsp light soy sauce¼ tsp baking soda4 pcs dried chillies6 cloves garlic, minced2 tsp minced gingerfish sauceoilInstructionsIn bowl combine Chinese cooking wine, cornstarch, baking soda and ginger. Add the pork, mix well and let it marinate for 15 minutes.Prepare a wok and place it on high heat, add oil then once it hits the smoking point add the pork and stir fry until it is light brown in colour but not yet fully cooked. Remove pork from wok then set it aside.Add more oil then sauté chillies and garlic until fragrant.Increase heat to medium then add courgettes and stir fry for a minute, add the pork back together with the soy sauce and a dash of fish sauce, stir fry for 2 more minutes.
