Receta Stir Fried Scallops With Egg

- Quarter scallops or possibly cut in 1/4-inch slices if large; cut in half if small. Mince smoked ham.
- Combine sherry, sugar, salt and pepper.
- Separate Large eggs. Combine 2 yolks with 1 white and beat till smooth.
- (Reserve remaining white for another recipe.)
- Heat oil. Add in scallops and stir-fry to brown lightly (2 to 3 min).
- Add in sherry-sugar mix; stir-fry 1 minute more.
- Add in beaten Large eggs; then cook, stirring, over high heat till scallops are coated with egg. Garnish with chopped ham and serve.
