Ingredientes

  • 3/4 lb Scallops
  • 2 Tbsp. Smoked ham
  • 2 Tbsp. Sherry
  • 1 tsp Sugar
  • 1/2 tsp Salt
  • 1 dsh Pepper
  • 2 x Large eggs
  • 3 Tbsp. Oil

Direcciones

  1. Quarter scallops or possibly cut in 1/4-inch slices if large; cut in half if small. Mince smoked ham.
  2. Combine sherry, sugar, salt and pepper.
  3. Separate Large eggs. Combine 2 yolks with 1 white and beat till smooth.
  4. (Reserve remaining white for another recipe.)
  5. Heat oil. Add in scallops and stir-fry to brown lightly (2 to 3 min).
  6. Add in sherry-sugar mix; stir-fry 1 minute more.
  7. Add in beaten Large eggs; then cook, stirring, over high heat till scallops are coated with egg. Garnish with chopped ham and serve.
