,%20butter,%20flour,%20milk,%20and%20cheese,%20then%20you've%20got%20the%20makings%20for%20your%20very%20own%20mac%20n'%20cheese.%3C/p%3E%3Cp%3EHere's%20how%20it%20comes%20together:%3C/p%3E%3Cp%3EThe%20first%20thing%20I%20do%20is%20bring%20a%20pot%20of%20water%20to%20a%20boil,%20then%20I%20throw%20in%20the%20pasta.%20I'm%20not%20a%20traditionalist%20when%20it%20comes%20to%20mac%20n'%20cheese.%20As%20a%20result%20my%20favorite%20types%20of%20pasta%20for%20this%20dish%20are,%20but%20not%20excluded%20to:%20bowtie,%20cavatappi,%20gemelli,%20penne,%20radiatore,%20rotelle%20(look%20like%20little%20wheels),%20and%20rotini.%20I%20almost%20never%20buy%20plain%20old%20macaroni.%20Today's%20pasta%20of%20choice%20happened%20to%20be%20radiatore.%3C/p%3E%3Cp%3EThen%20I%20melt%20butter%20in%20a%20skillet.%20Usually%202%20tablespoons.%3C/p%3E%3Cp%3EThis%20time,%20I%20added%20half%20of%20a%20diced%20onion%20and%20sauteed%20until%20tender.%20Then%20I%20added%20some%20sliced%20mushrooms%20and%20stirred%20them%20around%20for%20another%20few%20minutes.%3C/p%3E%3Cp%3EThe%20next%20step%20is%20to%20add%20flour.%20If%20veggies%20aren't%20your%20thing,%20you%20can%20skip%20right%20to%20stirring%20the%20flour%20into%20the%20melted%20butter.%3C/p%3E%3Cp%3ENow%20gradually%20stir...or%20better%20yet,%20whisk%20in%202%20cups%20of%20milk.%20You%20don't%20want%20any%20lumps%20in%20your%20sauce.%20I%20used%20skim%20milk%20because%20that's%20what%20I%20had.%3C/p%3E%3Cp%3ECook%20and%20stir%20over%20medium%20to%20medium%20high%20heat.%20By%20the%20time%20the%20mixture%20reaches%20a%20boil,%20it%20should%20be%20noticeably%20thicker.%20Turn%20the%20heat%20to%20low.%20Right%20now%20what%20I've%20got%20here%20is%20mushroom%20and%20onion%20gravy.%3C/p%3E%3Cp%3EWe're%20about%20to%20transition%20this%20gravy%20to%20cheese%20sauce,%20so%20stir%20in%20some%20cheese.%20Not%20very%20specific,%20am%20I?%20How%20much%20is%20some?%20What%20kind%20of%20cheese?%20If%20you're%20one%20of%20those%20detail%20oriented%20people,%20I%20apologize.%20I%20don't%20have%20an%20answer%20for%20you.%20Mac%20n'%20Cheese%20is%20a%20perfect%20way%20to%20use%20up%20cheese%20in%20your%20fridge%20that%20is%20nearing%20expiration.%20In%20my%20mac%20n'%20cheese%20this%20time:%20a%20chunk%20of%20Velveeta%20that%20I%20found%20wrapped%20in%20plastic%20wrap%20at%20the%20back%20of%20the%20fridge(I'm%20guessing%20it%20didn't%20find%20it's%20way%20into%20our%20dip%20at%20the%20Super%20Bowl%20party?),%20some%20shredded%20Colby%20Jack%20cheese%20at%20the%20bottom%20of%20a%20bag%20(almost%20a%20cup?),%20and%20finally%20some%20grated%20Romano%20cheese%20that%20was%20nearing%20expiration.%3C/p%3E%3Cp%3EUse%20whatever%20cheese%20you%20like.%20As%20long%20as%20it%20melts,%20you're%20good%20to%20go.%20I%20usually%20use%202cups%20of%20cheese%20or%20up%20to%208%20oz.%3C/p%3E%3Cp%3EOnce%20the%20cheese%20is%20melted,%20add%20your%20cooked,%20drained%20pasta%20and%20anything%20else%20you%20want%20to%20stir%20in.%20I%20ended%20up%20dropping%20a%20cup%20of%20peas%20into%20the%20water%20with%20the%20pasta%20during%20the%20last%20few%20minutes%20of%20cooking%20time.%20No%20need%20to%20dirty%20another%20pan!%20Toss%20the%20noodles%20and%20peas%20with%20the%20cheese%20sauce...%3C/p%3E%3Cp%3Eand%20you've%20got%20dinner%20in%2020%20minutes%20or%20less.%20I%20wanted%20mine%20a%20little%20peppery%20last%20time.%3C/p%3E%3Cp%3EHere%20are%20some%20other%20pairings%20that%20work%20really%20well%20when%20stirred%20into%20mac%20n'%20cheese:%3C/p%3E%3Cp%3ECrispy%20bacon%20and%20sharp%20white%20cheddar%3C/p%3E%3Cp%3EChicken%20and%20broccoli%3C/p%3E%3Cp%3ETaco%20meat,%20a%20can%20of%20salsa%20or%20diced%20tomatoes%20with%20green%20chilies,%20top%20with%20green%20onions%3C/p%3E%3Cp%3ESpeaking%20of%20mac%20n'%20cheese%20check%20out%20this%20Philly%20Cheese%20Mac%20Recipe!%20YUM!%3C/p%3E%3Cp%3EBasic%20Mac%20n%20Cheese%20Recipe%20take%20this%20and%20build%20on%20it!%3C/p%3E%3Cp%3ECook%20pasta%20according%20to%20pkg.%20directions.%20Toss%20in%20peas%20for%20the%20last%205%20minutes%20of%20cooking%20time.%20Drain.%20Melt%20butter%20in%20a%20skillet.%20Add%20onions%20and%20saute%20until%20tender.%20Add%20sliced%20mushrooms%20and%20cook%20for%20another%20few%20minutes,%20until%20lightly%20browned.%20Add%20flour%20and%20stir%20until%20combined.%20Stir%20in%20milk%20until%20smooth.%20Bring%20to%20a%20boil,%20stirring%20constantly.%20Mixture%20should%20be%20thickened.%20Turn%20heat%20to%20low.%20Stir%20in%20cheese%20until%20melted.%20Toss%20with%20pasta%20and%20peas.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E){kind=link}
