%20succeeding%20in%20making%20a%20Puglian%20dough%20out%20of%20water%20and%20semolina%20flour,%20but%20was%20cemented%20when%20we%20finally%20sat%20down%20to%20watch%20the%20season%20two%20premiere%20of%20Master%20of%20None.%20Earlier%20that%20evening%20I%20had%20been%20feeling%20rather%20vulnerable%20and%20grouchy%20but%20thought%20that%20a%20solid%20workout%20and%20some%20soothing%20yoga%20had%20calmed%20my%20nerves.%20Then%20Aziz%20Ansari%20has%20to%20go%20and%20make%20a%20big,%20soaring%20love%20letter%20to%20classic%20Italian%20cinema%20and%20show%20this%20sequence:%3C/p%3E%3Cp%3EReader,%20I%20all%20but%20burst%20into%20tears,%20it%20was%20so%20beautiful%20to%20watch%20(OK,%20it%20might%20have%20been%20the%20PMS%20too).%20Now%20keep%20in%20mind,%20this%20isn%E2%80%99t%20the%20first%20time%20Ansari%20has%20subjected%20us%20to%20pasta-making%20porn%20(see:%20%E2%80%9CMornings%E2%80%9D%20from%20the%20first%20season),%20but%20given%20how%20much%20more%20assured%20his%20hands%20are%20in%20pulling%20together%20the%20dough,%20it%20was%20a%20great%20way%20to%20show%20some%20character%20growth%20in%20a%20subtle%20way.%3C/p%3E%3Cp%3EThe%20really%20challenging%20thing%20of%20any%20pasta%20dough%20is%20incorporating%20the%20liquid%20portion%20(water/fat/protein)%20into%20the%20well%20without%20making%20a%20giant%20fucking%20mess.%20Michael%20by%20his%20own%20admission%20is%20not%20terribly%20great%20at%20this,%20and%20I%20think%20when%20I%20first%20attempted%20this%20recipe%20a%20little%20over%20a%20year%20ago%20I%20was%20blessed%20with%20either%20beginner%E2%80%99s%20luck%20or%20a%20low-humidity%20day%20becaThe%20use%20it%20came%20together%20almost%20effortlessly.%20This%20time?%20Not%20so%20much,%20and%20I%20definitely%20spent%20a%20day%20or%20two%20after%20the%20fact%20cleaning%20blotches%20of%20semolina%20off%20of%20the%20shirt%20and%20shorts%20I%20was%20wearing%20while%20I%20tried%20to%20mix%20everything%20together.%20(At%20least%20it%20was%20water%20and%20neither%20egg%20nor%20oil.)%3C/p%3E%3Cp%3ELike%20any%20pasta%20recipe%20that%20requires%20you%20to%20form%20shapes%20rather%20than%20run%20sheets%20through%20a%20roller%20or%20a%20cutter,%20you%20have%20to%20be%20willing%20to%20be%20patient%20and%20devote%20an%20hour%20or%20two%20to%20going%20through%20the%20whole%20mass%20of%20dough;%20putting%20on%20a%20movie%20or%20similar%20definitely%20helps%20move%20the%20time%20along.%20The%20shaping%20is%20relatively%20easy:%20using%20a%20bench%20scraper%20and%20your%20index,%20middle,%20and%20ring%20fingers%20you%20measure%20out%20lengths%20of%20dough%20that%E2%80%99s%20been%20rolled%20into%201/2-inch%20wide%20ropes,%20flatten%20them,%20and%20then%20use%20your%20fingers%20to%20create%20little%20grooves.%20You%20have%20to%20press%20hard%20and%20not%20all%20of%20the%20pieces%20will%20fully%20retain%20their%20shape;%20if%20you%E2%80%99re%20trying%20to%20impress%20a%20nonna%20this%20might%20be%20problematic,%20but%20if%20you%E2%80%99re%20only%20cooking%20for%20yourself,%20don%E2%80%99t%20worry%20about%20it.%20Letting%20them%20sit%20out%20while%20the%20sauce%20comes%20together%20does%20help%20them%20hold%20their%20shape,%20but%20I%E2%80%99m%20convinced%20that%20boiling%20them%20can%20take%20away%20some%20of%20their%20nuance.%3C/p%3E%3Cp%3EIn%20other%20words:%20I%E2%80%99m%20pretty%20sure%20that%20any%20Puglian%20nonna%20would%20call%20them%20ugly,%20and%20therefore%20I%20need%20to%20work%20on%20my%20technique.%20I%E2%80%99m%20OK%20with%20this.%3C/p%3E%3Cp%3EThe%20sauce,%20on%20the%20other%20hand,%20I%E2%80%99m%20pretty%20amazing%20at%20because%20I%E2%80%99m%20really%20good%20at%20making%20some%20garlic,%20basil,%20and%20canned%20tomatoes%20come%20together%20in%20a%20lovely%20way.%20Some%2020-ish%20minutes%20is%20enough%20to%20make%20this%20sauce%20taste%20really%20good,%20but%20if%20you%20want%20it%20to%20taste%20better%20a%20little%20extra%20time%20on%20the%20stove%20isn%E2%80%99t%20a%20bad%20idea.%20Adding%20the%20cheese%20and%20the%20additional%20fresh%20basil%20gives%20the%20final%20dish%20a%20nice%20contrast%20of%20saltiness,%20fattiness,%20and%20crispness.%20Making%20it%20is%20not%20a%20bad%20way%20to%20spend%20a%20Sunday%20afternoon,%20and%20these%20days%20it%E2%80%99s%20pretty%20easy%20to%20find%20semolina%20flour%20online%20if%20your%20local%20grocery%20store%20doesn%E2%80%99t%20carry%20it.%3C/p%3E%3Cp%3EStrascinati%20with%20tomato%20and%20basil%20sauce%20(strascinati%20con%20pomodoro%20e%20basilico)%3C/p%3E%3Cp%3EAdapted%20from%20Puglia%3C/p%3E%3Cp%3EFor%20the%20pasta:%3C/p%3E%3Cp%3E24%20oz%20semolina%20dough%20(the%20original%20recipe%20calls%20for%20just%20under%20this,%20but%20this%20is%20the%20size%20of%20the%20bag%20that%20comes%20from%20Bob%E2%80%99s%20Red%20Mill%20so%20instead%20of%20using%20all%20but%20a%20tiny%20portion%20I%20just%20went%20and%20used%20the%20whole%20thing)%3C/p%3E%3Cp%3ETo%20make%20the%20pasta,%20make%20a%20mound%20of%20the%20semolina%20flour%20on%20a%20clean%20cutting%20board%20or%20work%20counter.%20Make%20a%20well%20in%20the%20center,%20add%20a%20pinch%20of%20salt,%20and%20then%20carefully%20add%20the%20lukewarm%20water%20to%20the%20well,%20slowly%20incorporating%20the%20flour%20and%20water%20together.%20(You%20can%20do%20this%20in%20batches%20to%20keep%20the%20water%20from%20going%20everywhere).%20Once%20the%20water%20and%20flour%20have%20been%20incorporated%20into%20a%20smooth%20and%20dense%20dough,%20knead%20it%20for%2010%20minutes%20and%20then%20let%20rest%20for%2030%20minutes,%20wrapped%20in%20cling.%3C/p%3E%3Cp%3EWhen%20%20you%E2%80%99re%20ready%20to%20make%20pasta,%20give%20yourself%20some%20space%20on%20the%20clean%20work%20counter%20and%20start%20pinching%20off%20pieces%20of%20the%20dough.%20Roll%20it%20into%20a%20rope%20about%20a%20half-inch%20in%20diameter,%20and%20then%20use%20a%20bench%20scraper%20to%20cut%20out%20lengths%20about%201%201/2%20inches%20long%E2%80%93basically%20the%20length%20of%20your%20index,%20middle,%20and%20ring%20fingertips%20put%20together.%20Use%20those%20three%20fingertips%20to%20press%20into%20the%20pasta%20to%20make%20an%20indentation,%20and%20then%20set%20aside%20on%20a%20floured%20surface.%20(I%20actually%20use%20my%20silpats%20as%20resting%20spots%20which%20works%20quite%20well.)%20Repeat%20through%20the%20rest%20of%20the%20dough,%20and%20when%20they%20are%20all%20done%20let%20them%20rest%20while%20you%20work%20on%20the%20sauce.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20heat%20some%20olive%20oil%20and%20add%20the%20garlic%20and%20fry%20until%20fragrant.%20Add%20the%20tomatoes%20and%20half%20of%20the%20basil%20leaves%20and%20season%20with%20salt%20and%20pepper,%20letting%20them%20cook%20for%20about%2010%20minutes%20until%20the%20tomatoes%20have%20reduced.%3C/p%3E%3Cp%3EWhile%20that%E2%80%99s%20going,%20bring%20a%20large%20saucepan%20with%20water%20to%20boil,%20season%20with%20salt,%20and%20cook%20the%20pasta%20for%20about%204-5%20minutes%20until%20they%20start%20to%20float.%20Reserve%20a%20cup%20of%20the%20cooking%20water%20before%20draining,%20and%20then%20add%20the%20pasta%20to%20the%20sauce%20and%20stir%20well%20to%20coat%20each%20piece.%20Add%20the%20cooking%20water%20if%20needed%20to%20loosen%20the%20sauce,%20and%20then%20scatter%20the%20remaining%20basil%20over%20the%20pasta%20and%20serve%20immediately%20with%20freshly%20grated%20pecorino%20cheese.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
