Receta Strawberry and Balsamic Grilled Chicken Salad

A long time ago, as in like maybe ten years ago I found out I had an addiction. It was a strong addiction that makes my mouth water whenever that certain taste comes to mind. I can’t get enough of it. Some people think I’m a little odd some nod and agree because they understand that strong addiction. I’m sure you are wondering what that addiction is aren’t you? My friends, I’m about to let out one of my biggest secrets here. My addiction is…. Balsamic. I can not get enough of it. Can not no matter what I do. I first encountered this amazing, delicious invention at an Italian restaurant about 30 miles from my home town. It was a big deal when we got a new Italian restaurant around these parts and we all went there as often as possible!
They served this amazing bread that was freshly baked along with a little olive oil, Parmesan cheese, pepper and balsamic. I remember dipping my bread in the balsamic and ignoring the olive oil completely. I could not get enough of that stuff! If I was in the comforts of my own home I may have just licked that little plate, but I try to save face and act appropriately in public most of the time. I don’t really want to be the talk of the town in that way!
Because of this love of balsamic I now try to sneak it in whatever I’m making if it’s anywhere near appropriate. This time I put it in my salad to try and keep things a little bit lighter than dipping a loaf of bread in it! Strawberry and Balsamic Grilled Chicken Salad
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1/4 c. Newman's Own Lite Balsamic
- 10 oz spinach
- 1 pint strawberries hulled and sliced
- 1 (5 oz) package candied pecans
- 8 Tbsp Newman's Own Lite Balsmic
Instructions
Place chicken breasts in 1/4 c. balsamic and let marinade in the refrigerator for at least 2 hours.
Grill chicken breasts and slice.
Place spinach into a salad bowl; scatter strawberries and candied pecans over spinach. Place chicken on top of this mixture. Drizzle the remaining balsamic over salad. Serve immediately.
