%20about%20a%20dozen%20kinds%20of%20vinegar,%20I%20could%20tell%20that%20she%20was%20a%20foodie%20bookworm%20like%20me,%20and%20I%20just%20knew%20we%20would%20get%20along.%20Although%20we%E2%80%99ve%20discovered%20many%20other%20things%20in%20common%20in%20the%20time%20since,%20I%E2%80%99ll%20always%20remember%20that%20we%20bonded%20over%20a%20shared%20love%20of%20vinegar.%3C/p%3E%3Cp%3EVinegar%20is%20not%20just%20for%20salads%20and%20pickles!%20I%20have%20loved%20strawberries%20and%20balsamic%20vinegar%20together%20from%20the%20very%20minute%20I%20first%20tried%20it,%20but%20I%20do%20remember%20a%20lot%20of%20people%20being%20sceptical%20about%20the%20pairing%20a%20few%20years%20ago.%20It%E2%80%99s%20definitely%20something%20that%20needs%20to%20be%20tasted%20to%20be%20believed.%20Luckily%20these%20days,%20the%20combination%20seems%20as%20common%20and%20unquestioningly%20good%20as%20salt%20and%20caramel,%20or%20peanut%20butter%20and%20chocolate.%20A%20good%20quality%20vinegar%20can%20elevate%20a%20humble%20strawberry%20from%20childhood%20snack%20to%20all%20grown%20up%20in%20an%20instant.%3C/p%3E%3Cp%3EThe%20strawberries%20have%20been%20delicious%20so%20far%20this%20spring,%20and%20I%E2%80%99ve%20been%20eating%20them%20by%20the%20punnet%20full.%20I%E2%80%99ve%20been%20using%20them%20in%20my%20daily%20green%20smoothie,%20an%20afternoon%20snack,%20and%20sometimes%20even%20for%20dessert%20as%20well.%20Every%20recipe%20idea%20I%20come%20up%20with%20lately%20has%20seemed%20to%20be%20all%20about%20berries!%20But%20why%20not,%20they%20are%20one%20of%20my%20favourite%20foods,%20their%20season%20is%20short%20and%20they%20should%20be%20celebrated!%3C/p%3E%3Cp%3EI%20decided%20to%20make%20mini%20hand%20pies,%20which%20I%20love%20because%20they%20are%20the%20most%20perfectly%20portable%20and%20cute%20miniature%20snacklet%20%E2%80%93%20great%20for%20kids,%20picnics%20or%20just%20with%20a%20cup%20of%20tea.%20The%20strawberry%20juices%20bubbled%20and%20overflowed,%20which%20gave%20them%20a%20lovely%20rustic%20homemade%20look.%20While%20they%20are%20a%20tiny%20bit%20fiddly%20to%20make,%20the%20process%20is%20very%20easy%20and%20totally%20worth%20it.%20You%20do%20get%20into%20a%20bit%20of%20a%20production%20line,%20which%20when%20you%20get%20into%20the%20baking%20groove%20can%20be%20quite%20therapeutic!%3C/p%3E%3Cp%3EI%20used%20the%20same%20pastry%20as%20my%20cherry%20jam%20pop%20tarts%20from%20a%20few%20years%20ago,%20which%20is%20super%20simple%20to%20make.%20Do%20keep%20any%20excess%20in%20the%20fridge%20to%20continue%20chilling%20while%20you%20roll%20it%20out,%20as%20it%20becomes%20a%20little%20sticky%20as%20it%20warms%20to%20room%20temperature.%20The%20strawberries%20are%20sliced%20and%20stirred%20together%20with%20some%20good%20quality%20caramelised%20balsamic%20vinegar%20and%20flour.%20Mine%20were%20very%20fresh%20and%20sweet%20and%20didn%E2%80%99t%20need%20any%20additional%20sugar%20in%20the%20fruit%20mixture.%20I%20gave%20mine%20just%20a%20light%20dusting%20of%20raw%20sugar%20prior%20to%20baking%20and%20think%20they%E2%80%99re%20very%20cute%20as%20they%20are,%20but%20you%20could%20also%20make%20a%20simple%20glaze%20if%20you%20fancy.%3C/p%3E%3Cp%3EStrawberry%20Balsamic%20Hand%20Pies%3C/p%3E%3Cp%3EMakes%2016%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20food%20processor,%20combine%20flour,%20sugar%20and%20salt.%20Add%20the%20cold%20butter%20and%20pulse%20until%20only%20pea%20sized%20lumps%20remain%20in%20your%20mixture.%20In%20a%20small%20bowl,%20beat%20the%20egg%20with%20the%20milk.%20Add%20the%20mixture%20all%20at%20once%20to%20the%20dry%20ingredients%20and%20pulse%20until%20moisture%20is%20introduced%20to%20all%20of%20the%20flour%20mixture.%20Lightly%20dust%20a%20clean%20surface%20with%20flour%20and%20knead%20the%20dough%20until%20it%20starts%20to%20hold%20together.%20Divide%20the%20dough%20in%20two,%20wrap%20in%20plastic%20wrap%20and%20refrigerate%20for%20about%2030%20minutes.%3C/p%3E%3Cp%3EIn%20the%20meantime,%20combine%20filling%20ingredients%20together%20in%20a%20bowl%20and%20stir%20to%20combine.%20Set%20aside%20until%20required.%3C/p%3E%3Cp%3ERemove%20one%20piece%20of%20dough%20from%20the%20refrigerator.%20On%20a%20well%20floured%20surface,%20roll%20the%20dough%20out%20to%203mm%20thick.%20Cut%20out%2016%20x%208cm%20circles%20with%20a%20round%20cutter.%20Place%20the%20dough%20circles%20onto%20a%20baking%20tray%20lined%20with%20baking%20paper%20and%20refrigerate%20while%20you%20prepare%20the%20second%20piece%20of%20dough%20in%20the%20same%20way.%20Brush%20one%20set%20of%208%20circles%20with%20a%20beaten%20egg.%20This%20will%20act%20as%20the%20glue%20for%20the%20top%20layer%20of%20dough.%20Spoon%20an%20even%20layer%20of%20strawberries%20into%20the%20center%20of%20each%20brushed%20dough%20circle.%20Top%20with%20a%20second%20piece%20of%20dough%20and%20use%20a%20floured%20fork%20to%20crimp%20the%20sides%20closed.%20Use%20the%20a%20small%20knife%20to%20create%20vent%20holes%20in%20each%20pie.%20Brush%20with%20egg%20wash%20and%20scatter%20with%20raw%20sugar.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20180%C2%B0C%20(350%C2%B0F).%20Let%20the%20pies%20rest%20in%20the%20fridge%20while%20the%20oven%20preheats.%20Bake%20for%2020-25%20minutes%20or%20until%20golden%20brown%20on%20top.%20Serve%20warm%20or%20at%20room%20temperature.%20Best%20served%20within%202%20days.%3C/p%3E){kind=link}
