I sure hope you are all not getting tired of all my fresh fruit recipes, because I have yet another one for you.
Just sit back, relax, and get your taste buds ready.
As expected, these Strawberry Crumb Squares did not disappoint any pair of lips it made its way up to.
Strawberry Crumb Bars
TIP: Use a sturdy straw to hull your berries.

Serves: 25
Ingredients
- 1 cup sugar, divided
- 1 tsp baking powder
- 2½ cups all-purpose flour
- ¼ tsp salt
- Zest of 1 lemon
- 10 Tablespoons cold unsalted butter, cut into pieces
- 1 large egg
- 1½ pounds fresh strawberries, hulled and quartered (about 3½ cups)
- 4 teaspoons arrowroot (or cornstarch if you prefer)
- Juice of 1 lemon
Directions
Preheat the oven to 375° F.
Grease a 13×9 inch pan; set aside.
In a medium bowl, combine ½ cup of the sugar, the baking powder and flour.
Mix in the salt and the lemon zest, and stir together with a fork.
Cut in the butter and egg with a pastry blender (or two knives if you don’t have one) until the largest chunks are about pea-sized.
The mixture should be crumbly without much loose flour. Spread about half of the dough mixture in an even layer over the bottom of the prepared pan and press down firmly to form the bottom crust.
In another bowl, stir together the remaining sugar, arrowroot and lemon juice. Gently mix in the strawberries with a rubber spatula until combined.
Spread the berry mixture evenly over the bottom crust.
Crumble the remaining dough over the top of the berries.
Bake for about 45 minutes or until the top is slightly golden brown.
Cool completely before cutting into squares..

And if your lips were lucky enough to get a taste of these in my house then you know what I mean.
Easy come easy go.
But you know how I see it, cooking or baking with fruit has got to be healthier than the alternative. Remember I told you my go to items growing up were BBQ chips and anything chocolate.
So, like I said, this has to be better, right?
