Strawberry Gateau ~ Cake Slice Bakers May

For the rest of our baking year the Cake Slice Bakers are taking a different route. We’re still baking from Carole Walter’s Great Cakes but instead of us all baking the same cake we have four options to choose from. This book hasn’t tickled everyone’s fancy for a couple of reasons; lack of pictures, ingredients we’re not likely to use again and some of the recipes are very long. I think it’s going to be fun looking at different cakes and it may also whet our appetites to a cake that we once may have shrugged off.

For this reveal I chose the Strawberry Gateau. I chose it because it is way out of my comfort zone, way out. While putting this cake together I reminded myself that getting out of by baking cocoon was my goal. Super buttery dense cakes have been the mainstay of my baking repertoire and I love them. That being said this was a welcome change of pace and taste. The taste couldn’t be simpler or the end result more elegant although that may be questionable with my presentation, tee-hee!

The cake is a genoise (\zhā-ˈnwäz\ or Italian sponge cake and it isn’t the moistest cake in the bakery. This type of cake relies heavily on fillings and flavorings to heighten the taste. It is however a dream to handle which made splitting the one layer into three an easier task. Each layer received a generous brushing of simple syrup and copious amounts of whipped cream stabilized with unflavored gelatin. Wait until you read my next post and see what I have to say about stabilizing whipped cream, too funny.

In addition to the whipped cream the bottom and top layer are laden with strawberries and the contrast is gorgeous! I’ve shared with you before that the Mr doesn’t like sweet desserts. Well he got his wish with this one. As a matter of fact he even suggested that it could be a little sweeter. I’m going to mark that one on the calendar.
