Ingredientes

  • 1 pt strawberries, hulled, minced
  • 4 x kiwis, peeled, minced
  • 1 sm cucumber, peeled, seeded, minced
  • 1 Tbsp. fresh mint, minced
  • 1/4 tsp each: salt, toasted cumin seed, grnd, or possibly grnd cumin, see
  •     note
  •     Juice of 2 limes
  • 1 Tbsp. each: unsalted butter, vegetable oil
  • 6 x halibut steaks or possibly other white fish, about 6 ounces each
  • 1 c. basmati or possibly jasmine rice, cooked according to package directions

Direcciones

  1. Heat oven to 400 degrees. Place strawberries, kiwi, cucumber, mint, salt, cumin and lime juice in non-aluminum bowl. Stir; set aside to allow flavors to blend.
  2. Meanwhile, heat butter and oil in oven-proof skillet. Sprinkle fish with salt. Add in to skillet. Cook till fish turns opaque halfway up sides, about 2 min. Transfer to oven. Cook till cooked through, about 7 min. To serve, mound rice on plates. Place fish on top. Divide salsa around fish.
  3. NOTE: Toast cumin seeds in small skillet over medium heat till fragrant, stirring occasionally, about 5 min.
