Strawberry Lemon Fluff Angel Food Cake ~ Light, Fluffy Angel Food Cake Pilled with Light & Creamy Lemon Filling and Fresh Strawberries!

I’ve also been on a little bit of a lemon kick lately. Lemon makes me happy in the spring too. I’m not sure why but I always feel like I need to use lemon in the spring and no other time. It’s kind of a neglected flavor in my little world. I really should remedy that! I get so distracted by “seasonal” flavors. I have a hard time breaking out lemon when it’s “pumpkin season” in my mind. Anyone else like that? Lucky for me right now we are in the midst of strawberry and lemon season so I’m right on time with this delicious treat! It would be so perfect for a treat for Mother’s Day! I know if my family treated me to this Strawberry Lemon Fluff Angel Food Cake I’d be smiling from ear to ear!

For all of your guys out there this is totally easy to make. I’m pretty sure my hubs could even make it. Scared of actually making an angel food cake? No worries, the grocery store usually carries pre-made angel food cakes and I won’t tell anyone if you use one of those. Simply grab one of those or make your own, then cut it in half, stuff it with this amazing whipped filling full of lemon flavor then topped with strawberries. Plus, Mom’s going to love it because I lightened it up for her using Truvia. My favorite secret ingredient. This dessert is light, fluffy and delicious!

Strawberry Lemon Fluff Angel Food Cake

Ingredients

Instructions

In a large mixing bowl whip the cream cheese until smooth. Add Greek Yogurt and mix until combined and smooth. Add Truvia, lemon juice and mix until combined. Fold in Cool Whip.

Cut angel food cake in half. Place bottom half on cake stand. Spread 2/3 of filling over the top of the angel food cake. Layer with 1/2 of strawberry slices.

Place top half of angel food cake on top of strawberries. Layer with remaining Lemon Filling and strawberries.

Serve Immediately.

Notes

Best if ate the same day it is prepared.
