These hot summer days just call for something cooling and refreshing. I love to whip up a chilly drink in blender or just enjoy infused water with an ample amount of ice cubes. Smoothie with avocado and protein powder makes a nice, light lunch.
However, when evening comes, this sweet, tangy and boozy adult-only treat is a sure bet to celebrate in the coolest way!
Tips for making the Strawberry Margarita ice Pops
Preparing these ice pops is simple. Just place all ingredients in blender, blend until smooth, fill the ice pop molds and place in the freezer for several hours or overnight.
Even these ice pops are really easy to make, they will become perfect if you remember a couple of tricks. First of all, xanthan is not obligatory, but it will give better texture. It will prevent large ice crystals forming so the texture will be nicely smooth. You can also use guar gum or glucomannan instead of xanthan, those work in a similar way.
In any case, whatever thickener you use, be sure to sprinkle it evenly on top to prevent it from clumping.
This recipe is made for Ikea ice pop molds, though there is some leftover mixture to enjoy as refreshing drink. Feel free to adjust the amounts to your ice pop molds.
And naturally, it’s really easy to make alcohol-free treats by just leaving out tequila. You might want to increase the amount of lime juice to 1/4 cup (60 ml).

Strawberry Margarita Ice Pops
Ingredients
- 12 oz = 340 g hulled and halved organic strawberries
- 2-3 tablespoons organic lime juice
- 1/4 cup = 60 ml tequila
- 1/2 cup = 120 ml Confectioner's Style Swerve
- (optional: 1 pinch xanthan)
Directions
Place the strawberries, lime juice, tequila and the sweetener in a blender jar. Sprinkle the xanthan evenly on top.
Blend until smooth.
Pour the mixture into ice pop molds.
Freeze at least 6 hours or overnight.
