Strawberry Mini Loaf

This is a base recipe for what ever addition strikes your fancy. I used strawberry and coconut but you might like a savory loaf, say pancetta and bluecheese?

Makes 3 mini loaves, 3 x 5" pans

Ingredientes

  • ■2 2/3 cups flour
  • ■1/2 cup oats
  • ■1 tsp baking powder
  • ■1 tsp baking soda
  • ■1/2 tsp salt
  • ■1 1/3 cup brown sugar
  • ■1 cup low fat buttermilk
  • ■1/2 cup canola oil
  • ■1 egg
  • ■1 tsp vanilla

Direcciones

  1. Preheat oven to 350 F .
  2. Spray the pans with non stick.
  3. Mix together the first 5 ingredients from flour thru salt.
  4. Whip together the sugar, milk, oil,egg and vanilla.
  5. Blend the dry mix (flour, etc) into the wet mix (buttermilk, etc.) BUT JUST UNTIL INCORPORATED. Don’t over mix.
  6. Stir in your choice of flavor. I added 1 cup of chopped, fresh strawberries and 1/2 cup coconut.
  7. Pour into greased pans and bake for 45 – 55 minutes or until a knife inserted in the middle comes clean.
