Receta Strawberry Mojito Mocktail...
Today instead of an appetizer I thought I'd share what has been the highlight of happy hour for almost a week now! Fresh strawberries muddled with lime and fresh mint then splashed with Perrier/Club Soda...it's what all the cool people (diabetics) sip on a hot Summer's eve! And even the not-so-cool...the mister, never one to sip pretty drinks or ones with umbrellas, poured himself a pint and gulped it down with gusto! And then he grabbed himself a fork and tore in after the strawberries...he declared it liquid dessert...and you know, for once he just might be right!
You can make this with sugar or with sweetener...I made two batches, one with sugar and one with the pink stuff - my drug of choice - and both were equally as good! Make sure to use a clear pitcher so you can see all of the pretty ingredients! Of course, this isn't a real mojito...for that you would need to add demon rum but it's every bit as fun as a real one without the hangover!
Sparkling, sour-sweet and 100% refreshing! It's a party in the mouth!
- Strawberry Mojito Mocktail - Pots and Pins
- 7 strawberries, washed, stems remove, cut in half
- 1 bunch of fresh mint leaves, about 1/4 cup semi-packed
- 2 limes, cut into quarters
- 1 bottle Perrier or Club Soda (2 quarts)
- 4 packets Sweet n'Low (or 1 cup sugar)
In a pretty pitcher, combine strawberries, mint leaves and the juice from both limes, then toss in the limes. Using a "muddler" (anything that will "mash" the ingredients together) gently muddle the mixture 6 or 7 times and allow to sit for 10 minutes for the flavors to meld. Pour in the Perrier or Club Soda. Stir to mix. Fill 4 glasses with ice, pour mixture over ice. Serves 6 to 8 (one serving each).
