Strawberry Popsicles – use fresh strawberries to make super easy and delicious popsicles to enjoy all summer long. The pictures and text of this post has been updated.  It was originally posted in 2011. Summer is in full swing and it is hot!  Temps are well into the 90’s most of the time. Coming up with ways to cool down are a must. Ice cream is a delicious choice, but not always the best during swim suit season. No bake desserts are one of my family’s favorite things to make and eat, but sometimes you just want something frozen to really do the trick.  Popsicles to the rescue! A couple weeks ago, I did a Facebook Live video and made these popsicles.  The video was about 8 minutes long, so that just shows you how easy they are.  Everyone is always impressed when you tell them you made homemade popsicles, but they are so easy!  For these strawberry popsicles all you have to do is slice up strawberries and sprinkle with sugar.  They will get all juicy and delicious.  I like to add a little lime juice, but you could use lemon or just skip it.  Then all you have to do is blend and pour into molds.  Simple! My son likes it when his popsicles are smooth, so I blend mine a lot.  But if you want actual chucks of fruit, don’t blend them for as long.  You could do all sorts of flavors with this method.  Blueberries, raspberries, blackberries, cherries.  You could even mix some berries together.  A delicious and easy way to cool off all summer long. Strawberry Greek Yogurt Popsicles involve an extra step, but you can bump up the protein and make them super creamy by adding Greek yogurt.  If that is more of your thing, check out that recipe.
