- Mash or slice the strawberries,
- Place in a large bowl
- Add 2 tablespoons of sugar
- Set aside
- In another bowl, combine the flour, baking powder, salt, and remaining sugar
- Cut in the butter until crumbly
- In a small bowl, beat the egg and the milk
- Stir into the flour mixture just until moistened
- Fill the eight greased muffin cups two-thirds full
- Bake at 425 F for 12 minutes or until golden
- Remove from the pan to cool on a wire rack
- Just before serving, split the shortcakes in half horizontally
- Spoon the berries and the whipped cream between the layers and over the top
