%20and%20a%20big%20tray%20of%20fresh%20fruit.%3C/p%3E%3Cp%3EThis%20coffee%20cake%20was%20a%20big%20hit!%20I%20got%20comments%20like,%20%22Are%20you%20sure%20that%20didn't%20come%20from%20a%20bakery?%22%20and%20the%20most%20flattering%20comment%20from%20my%20friend's%20father,%20%22My%20mother%20used%20to%20make%20wonderful%20coffee%20cakes%20like%20that%20one.%20Yours%20was%20better.%22%20Wow.%20I%20was%20feeling%20especially%20proud%20since%20I%20borrowed%20from%20a%20few%20of%20the%20coffee%20cake%20recipes%20that%20I've%20tried%20over%20the%20years%20and%20developed%20this%20one%20on%20my%20own.%20I%20probably%20just%20got%20lucky%20with%20the%20right%20combination,%20but%20I'm%20definitely%20holding%20onto%20the%20recipe%20and%20using%20it%20again!%3C/p%3E%3Cp%3EThis%20fragrant%20(there's%20lots%20of%20vanilla%20in%20there!)%20coffee%20cake%20boasts%20a%20moist,%20tender%20crumb,%20bursting%20with%20juicy%20berries,%20and%20finished%20the%20sweet,%20nutty%20crunch%20of%20two%20layers%20of%20streusel.%20It's%20the%20perfect%20companion%20for%20your%20morning%20coffee!%3C/p%3E%3Cp%3EI%20began%20by%20mixing%20the%20streusel%20filling/topping%20ingredients:%20white%20sugar,%20brown%20sugar,%20chopped%20toasted%20pecans,%20cinnamon,%20and%20vanilla.%20Toss%20it%20all%20together%20and%20set%20aside.%3C/p%3E%3Cp%3ECream%20the%20butter%20and%20sugar%20and%20then%20add%20one%20egg%20at%20a%20time.%20Beat%20well%20after%20each%20egg%20so%20that%20the%20mixture%20becomes%20nice%20and%20fluffy.%3C/p%3E%3Cp%3EThen%20mix%20the%20dry%20ingredients%20together.%3C/p%3E%3Cp%3EAdd%20the%20dry%20ingredients%20alternately%20with...%3C/p%3E%3Cp%3Ethe%20sour%20cream%20(mixed%20with%201%201/2%20teaspoons%20of%20vanilla).%20Mix%20until%20JUST%20COMBINED%20after%20each%20addition.%3C/p%3E%3Cp%3EThen%20fold%20in%201/2%20to%203/4%20cup%20of%20plump%20blueberries.%20I%20toss%20my%20blueberries%20with%20flour%20first%20to%20keep%20them%20suspended%20in%20the%20batter,%20rather%20than%20sinking%20to%20the%20bottom.%3C/p%3E%3Cp%3EButter%20a%209%20inch%20springform%20pan.%20I%20used%20to%20think%20that%20one%20springform%20pan%20was%20as%20good%20as%20another.%20Then,%20I%20got%20this%20Pampered%20Chef%20Springform%20Pan%20Setfrom%20my%20grandma%20last%20Christmas.%20I%20busted%20it%20out%20for%20the%20first%20time%20when%20I%20made%20this%20cake.%20It's%20got%20a%20glass%20bottom%20and%20a%20special%20tool%20for%20loosening%20the%20cake%20from%20the%20sides%20of%20the%20pan%20and%20even%20flawlessly%20removing%20it%20from%20the%20bottom.%20If%20you're%20shopping%20for%20your%20first%20springform%20pan%20or%20just%20looking%20to%20upgrade,%20this%20one%20gets%20my%20recommendation.%20It%20was%20easy%20to%20use%20and%20yielded%20a%20perfect%20cake.%3C/p%3E%3Cp%3ESpread%20half%20of%20the%20batter%20in%20the%20bottom%20of%20the%20pan%20and%20smooth%20it%20out%20so%20that%20it's%20evenly%20distributed.%3C/p%3E%3Cp%3EThen%20sprinkle%20half%20of%20the%20streusel%20topping%20over%20the%20batter.%3C/p%3E%3Cp%3ETop%20with%20the%20remaining%20batter.%3C/p%3E%3Cp%3EAnd%20finally,%20the%20remaining%20streusel.%20Now%20pop%20the%20whole%20thing%20into%20the%20oven%20for%2055-70%20minutes,%20until%20a%20cake%20tester%20comes%20out%20clean.%3C/p%3E%3Cp%3ECool%20on%20a%20rack,%20then%20run%20a%20knife%20(or%20the%20special%20tool%20provided%20with%20the%20springform%20pan)%20around%20the%20edges%20to%20loosen%20before%20lifting%20the%20sides%20off%20of%20the%20pan.%3C/p%3E%3Cp%3ECut%20a%20big%20slice,%20pour%20a%20cup%20of%20coffee%20or%20tea,%20and%20enjoy!%20(If%20you%20have%20issues%20with%20self%20control%20when%20it%20comes%20to%20baked%20goods,%20then%20invite%20some%20friends%20to%20join%20you!)%3C/p%3E%3Cp%3EBlueberry%20Coffee%20Cake%3C/p%3E%3Cp%3EStreusel:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20Butter%20a%209%20inch%20round%20pan%20or%20a%20springform%20pan.%20Combine%20dry%20ingredients.%20Cream%20butter%20and%20sugar%20together.%20Add%20eggs,%20one%20at%20a%20time.%20Beat%20well%20after%20each%20addition%20until%20the%20mixture%20gets%20fluffy.%20Add%20the%20vanilla%20to%20the%20sour%20cream%20and%20then%20add%20alternately%20with%20the%20dry%20ingredients%20to%20the%20butter%20mixture,%20mixing%20until%20just%20combined%20after%20each%20addition.%20Toss%20the%20blueberries%20in%20some%20flour,%20then%20shake%20off%20the%20excess%20and%20fold%20them%20into%20the%20batter.%20Spread%20half%20of%20the%20batter%20evenly%20into%20the%20bottom%20of%20the%20cake%20pan.%20Top%20with%20half%20of%20the%20streusel.%20Top%20with%20the%20remaining%20batter,%20followed%20by%20the%20rest%20of%20the%20streusel.%20Bake%20for%2055-70%20minutes%20until%20the%20cake%20tests%20done.%20Cool%20on%20a%20rack.%3C/p%3E){kind=link}
