.%3C/p%3E%3Cp%3EIt%20could%20be%20green,%20for%20all%20I%20know.%20Or%20gray%20or%20black.%3C/p%3E%3Cp%3EAll%20I%20know%20is%20that%20it%20has%20a%20comfy%20headrest,%20and%20leans%20me%20back%20to%20the%20perfect%20angle.%20And,%20despite%20the%20dozens%20of%20chairs%20left%20by%20trusting%20locals%20and%20ready%20to%20be%20reached%20for,%20it%E2%80%99s%20the%20one%20I%20always%20grab,%20no%20matter%20where%20it%E2%80%99s%20ended%20up%20on%20the%20line.%3C/p%3E%3Cp%3EI%20work%20for%20a%20good%20family,%20for%20which%20I%E2%80%99m%20very%20grateful.%20They%20have%20a%20beautiful%20home,%20and%20are%20respectful%20of%20who%20I%20am%20and%20what%20I%20do,%20which%20includes%20providing%20three%20healthful%20and%20impressive%20meals%20a%20day%20for%20a%20variety%20of%20diets%20put%20forth%20by%20themselves%20and%20their%20constantly%20rotating%20houseful%20of%20guests%20(they%20are%20very%20generous%20hosts).%20There%20are%20times%20I%E2%80%99m%20overwhelmed%20by%20the%20work%20%E2%80%93%20by%20the%20very%20early%20mornings%20and%20long%20days,%20by%20the%20constant%20focus%20that%20is%20timing%20food%20and%20constantly%20producing%20a%20creative%20variety%20of%20food.%20Some%20days%20it%20feels%20like%20just%20too%20much.%3C/p%3E%3Cp%3EThere%20have%20been%20a%20few%20moments%20I%E2%80%99ve%20sunk%20to%20the%20kitchen%20floor%20in%20exhaustion.%20And%20many%20moments%20when%20I%E2%80%99ve%20calculated%20the%20days%20until%20I%20can%20drive%20home%20to%20NYC%20and%20be%20in%20my%20own%20space,%20with%20my%20dog%20and%20my%20kitchen%20and%20my%20roommate%20and%20my%20desk%20and%20my%20dirty%20laundry%20and%20my%20neighbors%20and%20my%20bed!%3C/p%3E%3Cp%3EBut,%20no%20matter%20the%20lovely%20guests,%20the%20frantic%20preparation%20or%20the%20random%20quiet%20moments%20when%20I%20drive%20on%20crowded%20summer%20Hamptons%20streets%E2%80%A6%3C/p%3E%3Cp%3E%E2%80%A6%20the%20day%20always%20ends%20in%20that%20chair.%3C/p%3E%3Cp%3EI%20fill%20my%20Starbucks%20insulated%20cup%20with%20whatever%20wine%20I%E2%80%99ve%20bought%20and%20stashed%20in%20the%20garage%20fridge%20and%20throw%20on%20comfy%20clothes%20and%20head%20across%20to%20the%20beach.%20I%20bury%20my%20toes%20in%20the%20cold%20sand%20and%20look%20up%20at%20the%20cloudy/clear%20sky%20with%20the%20warm/cool%20breeze%20blowing%20on%20me,%20nestling%20into%20that%20blue/green/black/gray%20chair.%3C/p%3E%3Cp%3EThat%20chair%20has%20seen%20me%20through%20some%20medical%20shit%20I%20won%E2%80%99t%20go%20into.%20And%20through%20thinking%20I%E2%80%99m%20not%20worthy%20of%20this%20job.%20And%20through%20thinking%20I%E2%80%99m%20worth%20more%20than%20my%20salary.%20And%20through%20thinking%20that%20this%20job%20and%20me%20are%20actually%20quite%20fit%20for%20each%20other.%20And%20through%20thinking%20about%20him/her/it/them/there.%20And%20through%20long%20phone%20conversations,%20songs%20on%20repeat%20in%20my%20headphones%20and%20moments%20of%20quite%20contemplation%20when%20I%20just%20stare%20out%20at%20the%20crashing%20waves%20and%20have%20to%20trust%20that%20I%E2%80%99m%20where%20I%E2%80%99m%20supposed%20to%20be%20in%20that%20very%20moment.%3C/p%3E%3Cp%3EFor%20my%20birthday%20I%20was%20given%20a%20journal%20with%20many%20of%20the%20menus%20and%20odd%20stories%20about%20my%20time%20here%20%E2%80%93%20relayed%20in%20texts%20to%20a%20friend.%20Soon%20I%E2%80%99ll%20add%20my%20own%20scribbled%20notes%20to%20it.%20And,%20at%20the%20end%20of%20the%20summer,%20I%E2%80%99ll%20reflect%20back%20on%20the%20skills%20I%E2%80%99ve%20learned,%20on%20the%20dishes%20I%E2%80%99ve%20made%20that%20I%20look%20forward%20to%20making%20for%20my%20own%20loved%20ones,%20on%20how%20awesome%20my%20warrior%20dog%20who%20has%20shuttled%20between%20homes%20in%20my%20absence%20was,%20and%20how%20I%20made%20it%20through%20the%20summer.%3C/p%3E%3Cp%3EThat%20time%20of%20reflection%20is%20still%20a%20bit%20away.%3C/p%3E%3Cp%3EBut,%20until%20then,%20at%20least%20I%20know%20I%20have%20my%20blue/green/black/gray%20chair%20to%20look%20forward%20to%20at%20the%20end%20of%20the%20day%E2%80%A6%3C/p%3E%3Cp%3EString%20Bean%20and%20Arugula%20Salad%20with%20Macadamia%20Nut%20Dressing%20and%20Marcona%20Almonds%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPlace%202%20Tbsp%20olive%20oil%20in%20a%20medium%20saucepan%20over%20medium%20heat.%20Add%20the%20string%20beans%20and%20cook%20until%20they%20just%20soften%20but%20before%20they%20brown,%20about%203%20minutes.%20With%20tongs%20(one%20of%20my%20top%20five%20kitchen%20utensils),%20remove%20to%20a%20large%20bowl.%3C/p%3E%3Cp%3EAdd%20red%20onion%20and%20garlic,%20and%20cook%20until%20just%20softened,%20about%205%20minutes.%20Remove%20to%20bowl.%3C/p%3E%3Cp%3EAdd%20almonds%20(or%20whichever%20nut%20is%20currently%20striking%20your%20fancy)%20to%20skillet,%20and%20toss%20them%20around%20a%20few%20times%20until%20they%20start%20getting%20all%20nutty%20and%20toasty.%20Add%20remaining%20tsp%20of%20olive%20oil%20and%20herbs%20de%20Provence%20and%20keep%20flippin%20em%20until%20they%E2%80%99re%20slightly%20browned%20and%20glossy.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20macadamia%20nut%20oil,%20red%20wine%20vinegar,%20kosher%20salt%20and%20pepper%20until%20smooth%20and%20glossy-like.%3C/p%3E%3Cp%3EAdd%20arugula%20to%20bowl%20with%20warmed%20string%20beans,%20and%20toss%20to%20slightly%20wilt.%20Add%20dressing%20and%20toss%20to%20combine.%3C/p%3E%3Cp%3EPour%20into%20serving%20plate%20and%20garnish%20with%20almonds.%3C/p%3E){kind=link}
