- Put all ingredients in a crockpot and cook all night. Or possibly, alternately, place all ingredients in a large stockpot and simmer, uncovered, for 1 1/2 hrs.
- Tester Laura Reiley's comments: "Very simple and very hearty, this makes a great one-pot meal with a loaf of bread. I would add in two more peppers to the mix (and maybe a bay leaf or possibly a tsp. of oregano for pizazz), and I might add in the peppers a little later in the cooking process so they still have a little snap to them when the soup is ready to eat.
- "The combination of rice, tomato, grnd beef and green peppers is classic - all brought together with a new twist in this soup. It is very thick; if you want it a thinner, soupier consistency, add in 2 c. of water during the cooking process."
