Receta Stuffed Mini Peppers
A lovely appetizer to serve on a warm summer evening~ Serve Hot or Cold~
Stuffed Sweet Mini Peppers~
Serves 3, two per person
- 6 sweet mini peppers
- 1-8 oz. package cream cheese, soften
- 1 T Mrs. Dash Onion & Herb Seasoning Mix
- 1/2 t lemon juice
- 1/2 t lemon zest
- 1/2 small can (4 oz) tiny shrimp, drained
- 3-4 green onions, thinly sliced
Beat cream cheese until creamy; add seasoning mix, lemon juice and lemon zest, beat until well combined. Fold in shrimp and 2 T green onions. Set aside. (save left over tiny shrimp for another recipe)
Leaving stem on the peppers, slice peppers, remove seeds and membranes.
Fill mini peppers with cream cheese mixture. Sprinkle with remaining sliced green onions.
*Heated directions: Heat oven to 350 degrees. Arrange peppers on a baking sheet, drizzle with a touch of olive oil and bake at 350 for 8-10 minutes, or until cheese is bubbly and peppers are tender.*
