Stuffed Muskox Tenderloin With Cranberry Coulis

Ingredientes

  • 4 ounce Muskox tenderloin, butter- flied and slightly pounded
  • 2 ounce Swiss cheese, thinly sliced
  • 1 x Mushroom, sliced
  • 4 sm Broccoli florets
  • 4 Tbsp. Cranberries
  • 2 tsp Orange juice, fresh squeezed
  • 1 Tbsp. Butter
  • 1/2 cl Garlic, finely chopped
  •     Assorted fresh veggies
  • 1 med Potato, boiled
  • 2 Tbsp. Lemon juice
  • 1 tsp Soy sauce
  • 1 dsh Tabasco

Direcciones

  1. Simmer the cranberries in the orange juice till they just start to burst.
  2. Set aside and keep hot.
  3. Stuff the muskox with the cheese, mushroom and broccoli and roll it up and tie it with string. Bake for 25 min at 350 F. Untie the muskox and top with cranberry coulis.
  4. Serve with fresh vegetables sauted in garlic butter and sprinkled with lemon juice and a boiled potato marinaded warm for a few min in soya and tabasco.
