%3C/p%3E%3Cp%3E4.13.10%3C/p%3E%3Cp%3EIn%20the%20last%20post%20I%20mentioned%20the%20Cupcakecamp%20and%20I%20promised%20I%20would%20go%20and%20snap%20some%20photos%20to%20share.%20Guess%20what,%20I%20did%20go!!%20BUT%20I%20misplaced%20my%20memory%20card!!%20I%20know%20I%20know...my%20bad...I%20figured%20I%20could%20make%20it%20up%20with%20this%20stuffed%20omelette%20recipe%20from%20my%20mom.%3C/p%3E%3Cp%3EComing%20back%20to%20the%20stuffed%20omelette,%20I%20was%20thinking%20back%20to%20what%20my%20favorite%20mommy-homemade%20food%20was%20the%20other%20day.%20This%20dish%20came%20up.%20I%20have%20missed%20my%20mom's%20homemade%20food%20lately.%20It's%20not%20only%20the%20food%20that%20I%20missed%20but%20also%20the%20good%20company%20and%20atmosphere%20that%20I%20missed.%20%20My%20mom%20used%20fresh%20baby%20corn%20instead%20of%20whole%20corn.%20I%20couldn't%20seem%20to%20find%20that%20corn%20here%20so%20I%20used%20the%20whole%20corn%20instead.%20In%20fact,%20you%20can%20substitute%20with%20any%20vegetable%20you%20like.%20You%20can%20have%20it%20for%20breakfast,%20lunch,%20or%20dinner%20(over%20rice).%20So%20I%20call%20it%20a%20B.L.D%20Omelette!%3C/p%3E%3Cp%3EThe%20thin%20omelette%20looks%20like%20a%20French%20crape%20to%20me.%20The%20most%20challenging%20part%20for%20me%20was%20to%20create%20the%20perfect%20omelette%20shell.%20If%20you%20make%20it%20too%20thin,%20it%20will%20break%20when%20you%20put%20the%20stuffing%20on%20and%20fold%20it.%20If%20you%20make%20it%20too%20thick,%20you%20will%20taste%20the%20egg%20more%20than%20the%20stuffing..and%20the%20omelet%20shell%20might%20get%20too%20hard%20to%20fold.%3C/p%3E%3Cp%3EStuffed%20Omelette%3C/p%3E%3Cp%3EYield:%206%20stuffed%20omelettes%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EHeat%20up%20a%20deep%20skillet.%20Brown%20the%20bacon%20until%20almost%20crispy.%20No%20need%20to%20add%20oil.%3C/p%3E%3Cp%3EAdd%20ground%20turkey%20all%20at%20once.%20Use%20wooden%20spoon%20to%20break%20it%20apart.%20Try%20not%20to%20have%20the%20turkey%20in%20a%20big%20chunk.%20Cook%20it%20through.%3C/p%3E%3Cp%3EAdd%20onion%20and%20saute%20it%20till%20it's%20translucent.%20Then%20add%20mushrooms.%20Saute%20it%20about%203%20mins.%3C/p%3E%3Cp%3EAdd%20all%20the%20vegetable%20except%20green%20onion%20and%20cilantro%3C/p%3E%3Cp%3ESeason%20with%20oyster%20sauce,%20soy%20sauce,%20sugar,%20ketchup,%20fish%20sauce,%20and%20peppers.%20Adjust%20the%20taste%20as%20you%20wish.%20Transfer%20to%20a%20bowl%20and%20set%20a%20side%3C/p%3E%3Cp%3EOn%20a%20wide%20flat%20pan,%20heat%20up%20oil.%20Swirl%20oil%20to%20cover%20all%20the%20surface%20pan.%20Use%20low%20heat%3C/p%3E%3Cp%3EWisk%20eggs%20and%20pour%20over%20the%20pan,%20swirl%20the%20egg%20quickly%20to%20make%20an%20even%20shell%3C/p%3E%3Cp%3EPut%20turkey%20stuffing%20in%20the%20middle.%20When%20the%20egg%20started%20to%20cook%20through%20(check%20by%20using%20a%20flat%20spatula%20to%20detach%20it%20from%20a%20pan),%20fold%20on%20the%20sides,%20then%20bottom%20and%20top.%20Use%20a%20spatula/wooden%20spoon%20to%20help%20fold%20it%20tight%3C/p%3E%3Cp%3ENow%20it's%20ready%20to%20flip%20and%20this%20can%20be%20tricky!%20Use%20a%20plate%20and%20cover%20the%20omelette%20as%20shown%20in%20the%20photo.%20Flip%20the%20whole%20pan%20up%20side%20down%3C/p%3E%3Cp%3EDrizzle%20with%20ketchup%3C/p%3E%3Cp%3ETips:%20Use%20low%20heat%20to%20cook%20the%20egg%20otherwise%20it%20will%20burn%20too%20fast%20and%20gets%20too%20brown%20instead%20of%20golden%20brown%3C/p%3E%3Cp%3EFold%20it%204-side%20way.%20Make%20a%20pillow%20of%20it.%3C/p%3E%3Cp%3EIt's%20the%20trick%20to%20not%20damage%20the%20omelette.%20Turn%20and%20flip!%3C/p%3E%3Cp%3EYep,%20that's%20my%20kind%20of%20omelette!%3C/p%3E){kind=link}
