Stuffed Peaches

I altered this a fair bit from the original to work with what I could find at the store and what I had on hand, but it still turned out pretty tasty!

Ingredientes

  • 6 ripe peaches (or one per person)
  • 2 oz vanilla graham cookies, crushed
  • 1 egg yolk
  • 2 T sugar
  • 3/4 oz almond meal
  • 1 T Frangelico
  • 1/4 c white wine
  • extra sugar for sprinkling
  • butter for dotting on top

Direcciones

  1. Preheat your oven to 350, and lightly grease a 9x13 pan.
  2. Carefully split each peach and remove the pit. Arrange the halves in your pan, with the split facing up.
  3. Scoop out a little of the meat and save it in a bowl.
  4. Combine the crushed cookies, egg, sugar, almond meal and liquor with the peach meat.
  5. Spoon the mixture into each of the peach halves.
  6. Sprinkle over the white wine, extra sugar, and dot each with a small pat of butter.
  7. Bake for 20-25 minutes, until golden brown.
