Receta Stuffed Summer Squash with Tomato, Bacon & Herbs

As I said yesterday….

This time of year we alternate between chard and squash, first course and side dish.

This is a first course.

I planted one green, one green striped, one yellow and one white summer squash.

The white squash tend to be very long and skinny, which is what I used here.

They’re usually straight….

Stuffed Summer Squash with Tomato, Bacon & Herbs

Total time: 40 minutes

Ingredients:

Instructions:

Cut squash in half the long way.

Using the tip of a small spoon, scrape out the seeds and a bit of flesh, leaving about 1/4″ (.5cm) all around. Place on baking sheet.

Fry the bacon until crisp. Remove and crumble.

Divide the bacon and fill each squash half.

Top bacon with cherry tomato quarters, mounding as needed

Bake, 400F (200C) for 20 minutes.

Remove and top each squash with chives and basil.

Sprinkle cheese over herbs. Don’t worry if herbs and cheese falls off – just add it to the plates when you serve.

Bake 5 minutes longer

Remove Stuffed Zucchini, arrange on plates, add any herbs and cheese and serve.

This is the village our friend lives in.

There are 13 houses in this old village, all of them now restored and lived in. It’s foot traffic only, and the paths and stairs are very steep, with handrails (you can see in the photo). Cars are kept around the outside where ever they can be tucked out of the way.

To give you an idea…. The main door to our friend’s house is on the outer side of the village. At the top of his house, 48 steps up, there is a door opening out on street level to the inner part of the village. That door is on the left, after the first level of handrail.

This is the closet town to his village. It’s very busy in the summer with hikers, climbers and white-water rafters. In the winter it’s filled with skiers.

This is one of the small grocery stores in the town. Our friend gets cheese, wine and sausages here.

And ham….

This is typical of small grocers in the country – no self-service….

We went in to see if he had any good rosados.

By the time we left, 15 minutes later, we had tasted 2 wines (‘tasting’ was a full glass) and 3 cheeses and were invited to go with the owner to a vineyard on a buying trip.

People are very friendly in the mountains in Spain….
